Hi, Im pretty terrible at baking but I want to bake zuchinni bread. I can go on recipes.com but Im not sure if they would have a very simple recipe for beginners like me and also I want one that has been made over and over again by someone and is a family favorite. Any help you can give me would be greatly appreciated. Thank you

ZUCCHINI BREAD

1 pkg. Pillsbury nut bread
1 c. shredded zucchini
1 egg
1/2 tsp. cinnamon
1/4 tsp. cloves
2/3 c. milk
1/2 cup raisns
2 tbsp. Wesson oil

Mix all ingredients but the zucchini until well blended. Fold in zucchini. Pour into bread pans that have been greased on the bottoms only. Bake at 350 degrees for 45-55 minutes.
Variation: Omit oil. Add 2/3 cup sour cream instead.

I will tell you, there are no details as to how simple, or what equipment you have to work with. Do you have a bread machine? Try this;
Zucchini Wheat Bread
3/4 c. shcredded zucchini
3/4 c. water
3Tbls. vegetable oil
3Tbls. honey
3/4 tsp.salt (needed for the chemical reaction as well as taste)
1 tsp grated orange peel
1/4 c. wheat germ
1&1/2 c. whole wheat flour
1& 1/2 c. bread flour (reduces the gluten while mixing)
1& 1/2 tsp. yeast
raisins ( would think between 3/4 cups and 1 cup )

If you don't have a bread machine;
1 & 1/2 cups of all purpose flour
1 tsp. ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp ground nutmeg (fresh is best, but can use jarred)
1 c. sugar
1 c. finely shredded unpeeled zucchini
1/4 c. cooking oil
1 egg
1/4 tsp. finely shredded lemon peel (orange will work too)
1/2 c. chopped walnuts
mix all dry ingredients except sugar and flour in one bowl
mix remainder exept walnuts and flour in another
after combining mix in flour a little at a time and stir until just mixed, then stir in walnuts. (If you want substitute the raisins here, or add them to the mix)
Bake in bread pan at 350 deg. for about an hour. Probably on center rack is best until toothpick in middle comes out clean
cool for ten minutes on wire rack
Wrap and store overnight before slicing

You can always go to your local library for the latter recipe or others. I use recipezaar.com extensively. free with sign up for basic membership, but they've bailed me out of quite a few jams.

First, what is Wesson oil?

I don't have a recipe, I will try the one given to you by Milisa G, sounds delicious!! but this may help....

If you follow a recipe VERY carefully, measure accurately, and not choose something that is classified as number 10 in a 1 to 10 rating of difficulty, you should be able to made really successful food.
You don't have to be a fantastic cook, just take it easy and enjoy what you are doing.
If you cook for a family, and they are not all starving to death, you must be doing something right!!

Try FoodNetwork.com, they have alot of different recipes that they grade from easy to difficult. My mother uses a banana bread recipe and uses a little less banana and adds shredded zucchinni. Adding raisins to this also wouldn't hurt.:)
