Are they spicy tacos? If so, you may actually want to consider a Riesling or Gewurtztraminer. Those are the best with spicy Asian foods, like Thai dishes, but I can see them working with Mexican. They're white, sweet, a little bubbly, but not like champagne. More just lightly fizzy. They're a good palate cleanser. Beer or margaritas would be better in general, though. Or sangria, which if you're not familiar is a bit like alcoholic fruit punch.

Beer goes better, but a nice red like a Zinfandel or Merlot or a pitcher of Sangria.

The best wine with Mexican food is a good California sparkler. I recommend something by Schramsberg or Mumm.
