I'd agree with the person who said bread, for without bread, what is there except a plate full of meats and cheeses and condiments? The top slice is the roof of the house, and the bottom is the foundation, and without them, the walls would crumble.
Lame analogy, I know.

First is the bread. Then is the meat. Unless I am actively craving something like bologna, I just cannot make myself eat the pre-packaged lunchmeats anymore. I have to spend the extra money and go to the deli counter and get "real" ham and turkey breast and roast beef (especially now that we have Central Market, which has phenomenal roast beef!).
Really, the bread is only more important because I don't always eat sandwiches with sliced meat in them, and bread matters then too. But it's sadly true; I've become a deli snob.

The *single* element in my opinion would be variety, of texture and taste sensations and flavors. The best sandwich I have eaten was on ciabatta bread, with pepper encrusted port tenderloin, goat cheese, crisp Granny Smith apple slices and radiccio leaves.
Sounds weird, but when put together, is a party in the mouth!

Yes, the first two bread answers are good -- but then, whatever makes you happy to have ON the sandwich. Me, I love a nice Swiss with avocado, red onion, spinach, tomato and cucumber on wheatberry bread.

the bread . That's why places like Subway and Quiznos are un able to make a really good sandwich ; they start with crappy bread. As we all the know ,gabage in= garbage out
