Okay... does anyone have any quick and easy recipes? Mine is Apple Crisp... here is the recipe (hope you like it ) :O)

Filling:
15 to 20 apples, in a variety of brands, peeled and sliced
1/2 cup cinnamon and sugar mixture
1/2 to 1 cup apple cider or orange juice

Topping:
2 cups bleached flour
2 cups sugar
2 sticks cold margarine

Preheat oven to 400 degrees F.

Layer sliced apples into an ungreased 13 by 9 by 2-inch pan. Sprinkle cinnamon and sugar mixture in between each layer. Use enough cinnamon and sugar to cover each layer. Once apples are to the top of the pan, cover with final layer of cinnamon and sugar and then pour either your apple cider or orange juice over the entire mixture.

Mix the 3 toppings ingredients together with a mixer until it is crumbly. Cover the apples with the topping. Bake for 45 minutes. Cool and serve.

Crock Pot Enchiladas
Serves 6

1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup

Instructions:
Brown hamburger and chopped onion and pour off grease.

Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.

Bake for 45 minutes; drain any residual fat if necessary.

Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Crab Quiche
Serves 6

1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray

Instructions:
Preheat the oven to 350ºF

Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.

Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.

Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.

Serve immediately.

Strawberry Shake
Serves 2

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Tbsp Sugar Substitute (recommended: Splenda)
2 Whole Strawberries, garnish

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.

Pour into glasses; garnish each with a whole strawberry.

Brownie Pie

Prepare a box of Brownie mix per directions on the box in a round pie pan. Baked as directed.

In a medium mixing bowl beat together...
1 pkg cream cheese
1/2 C sugar
add tsp. vanilla
beat until creamed

fold in a 8 oz tub whipcream

spread over cooled brownie
drizzle chocolate over the top (optional)
refridgerate for at least 2 hours

serves 8

Stuffed zucchini
yield
2 servings.
ingredients
 2 medium zucchini
 1/2 pound ground beef or bulk Italian sausage
 1/4 cup chopped onion
 1 garlic clove, minced
 2/3 cup seasoned bread crumbs
 1/3 cup milk
 1/8 teaspoon dill weed
 1 cup spaghetti sauce
 1/2 cup shredded cheddar cheese

directions
Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp; set pulp and shells aside. In a skillet, brown meat, onion and garlic; drain. Add pulp, bread crumbs, milk and dill. Spoon into zucchini shells. Place in a greased 2-qt. baking dish. Top with spaghetti sauce; sprinkle with cheese. Cover and bake at 325° for 30 minutes or until zucchini is tender.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Chicken Delmonico

Chicken pieces
2 tbl yellow or dijon mustard
2tbl butter, softened
2tbl vinegar, any kind except apple cider
Bread crumbs

Mix mustard, butter and vinegar together, rub over chicken. Roll in bread crumbs. Place in baking dish. Bake at 350 deg, until cooked and bread crumbs are brown.

Chicken is tender and there is no need for other seasonings. Perfect!

Chocolate Gravy

4 cups Milk
2 cups Sugar
1/2 cup plain cocoa
1/2 cup + 1 TBSP self-rising flour
1 stick butter

Pineapple Lemon Cheescake Pie

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
1 can (8 oz.) crushed pineapple, drained, divided
2 cups thawed COOL WHIP Whipped Topping
1 HONEY MAID Graham Pie Crust (6 oz.)
1-1/3 cups cold milk
1 pkg. (4-serving size) JELL-O Lemon Flavor Instant Pudding & Pie Filling

BEAT cream cheese and sugar in large bowl with wire whisk until well blended. Stir in half of the pineapple. Gently stir in whipped topping.
SPREAD into pie crust.
POUR milk into medium bowl. Add dry pudding mix. Beat with wire whisk 2 minutes or until well blended. (Mixture will be thick.) Stir in remaining pineapple. Spoon over cream cheese layer in pie crust. Refrigerate several hours or until chilled. Store leftover pie in refrigerator.

Chocolate Cheescake

1-1/2 cups crushed OREO Chocolate Sandwich Cookies (about 18 cookies)
2 Tbsp. butter or margarine, melted
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1 tsp. vanilla
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate, melted, slightly cooled
3 eggs
1 cup thawed COOL WHIP Strawberry Whipped Topping
1-1/2 cups assorted seasonal fruit, such as chopped strawberries and sliced kiwi

PREHEAT oven to 325°F if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Mix crushed cookies and butter; press firmly onto bottom of pan. Bake 10 min.
BEAT cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
BAKE 45 to 55 min. or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Top with whipped topping and fruit.

Pumpkin Mousse Trifle *perfect for Thanksgiving!*

42 NILLA Wafers, divided
1 pkg. ( 8 oz.) PHILADELPHIA Cream Cheese, softened
1 can (15 oz.) pumpkin
1 tsp. vanilla
1/2 tsp. pumpkin pie spice
1-3/4 cups cold milk
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
2 cups thawed COOL WHIP Whipped Topping, divided
1/2 cup Autumn Spiced Nuts

ARRANGE 32 of the wafers on bottom and up side of 2-1/2-qt. serving bowl; set aside. Beat cream cheese and pumpkin in medium bowl with electric beater on medium speed until well blended. Add vanilla and spice; mix well.
POUR milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Let stand 5 min. Gently stir in 1-1/2 cups of the whipped topping. Add cream cheese mixture; stir until well blended.
SPOON half of the pudding mixture into prepared bowl; top with the remaining wafers. Cover with layers of the remaining pudding mixture and remaining 1/2 cup whipped topping. Sprinkle with the Autumn Spiced Nuts. Store leftover dessert in refrigerator.

Peach Raspberry Cobbler

4 cups sliced peeled peaches
3/4 cup sugar
3 Tbsp. MINUTE Tapioca
2 cups raspberries
5 Tbsp. cold butter or margarine, divided
3/4 cup flour
2 Tbsp. sugar
1 tsp. CALUMET Baking Powder
1/8 tsp. salt
1/4 cup milk

PREHEAT oven to 375°F. Mix peaches, 3/4 cup sugar and tapioca in large saucepan. Stir in 3/4 cup water. Bring to boil on medium heat, stirring occasionally. Stir in raspberries. Pour into 9-inch square baking dish. Dot with 1 Tbsp. of the butter.
MIX flour, 2 Tbsp. sugar, baking powder and salt in medium bowl. Cut in remaining 4 Tbsp. butter until mixture resembles coarse crumbs. Stir in milk until mixture forms soft dough. Drop by heaping tablespoonfuls onto hot fruit mixture.
BAKE 30 minutes or until biscuits are golden brown.
