Should I minor in another language, or some other subject? The school I attend offers courses in Arabic, Chinese, French, Japanese, Portuguese, Russian, Spanish, or Swahili. Not really interested in Spanish, Arabic, or Swahili, though.
I would like to know what would be the better career move, not an opinion based on personal preference.

How about Political Science or World History? It will help you to get know your future clientele.

It depend where you're from. If you were from Europe, I would advise you to minor in Eastern-European Languages since new countries are joining the EU now and there are not too many translators specializing in those languages, so less competition, more money.
Usually, when trying to make a career move, go for the countries that are now going through major economic expansion, so Russian and Chinese are a good start. Difficult, but as I said earlier: less competition means more money because you get all the job offers.
Arabic would've been a good idea with all the peace conferences going on right now at the UN. That'll be going on for a while, so it's a good source of cash.
Also, you should know that interpreting is usually done in only one language, the one you are proficient in, and you translate from it to your native language.

I think in my opinion try one of these languages like Arabic, Swahili, Russian or other Eastern'a languages. Cause if you ever decide to work in the government agency's this can be of help to you. Furthermore, If you decide to be an Interpreter in the Military, good chance is you get the job. Cause seldom do people speak this kind's of languages. Good luck. I would suggest something like linguistics or possibly even communications. Also, many schools offer direct translating courses in the language major, so make sure you take those if they are offered. From all the languages you listed that are offered, it seems like this is probably a large school, so they may have courses and programs specifically for interpreting.
