I asked my local chinese resturant and they told me they barbeque it. They use pork butt and shoulder with the bone. How do you make it, and if you've never made it please don't answer.

you fry it in a wok or frying pan mixing it up often mix in soy sauce and some teriyaki sauce

I am guessing you probably went to a Cantonese style place. In Cantonese cooking, they prepare BBQ pork for fried rice, but other regional cusines don't. You can go to Chinese grocery store to buy BBQ sauce and follow the directions. LKK brand sauce usually is what I like the best. If you follow directions closely, you should have a pretty good end product. However, the way that Chinese restaurant/deli prepare it is quite different from homemade. Don't expect your homemade BBQ port to be the same, because it won't given you probably don't have the big oven, the time to brush honey 2-3 times, and to turn it constantly.

if you're talking about something like katzu (japanese fried pork)
then you need some special powder (i forgot what they're called) covering the pork then fry them
