1/4 cup tamari soy sauce (soy sauce)
1 cup water
fresh grated ginger (about 1 Tbs. or to your taste)
3 tablespoons brown sugar
1 clove minced garlic
2 tablespoons cornstarch
1/4 cup cold water

Combine 1 cup water,tamari,brown sugar and garlic in a saucepan and bring to a boil,stirring constantly.
Dissolve corn starch in 1/4 cup of cold water and add to sauce.
Stir constantly to allow the sauce to thicken.
If the sauce is too thick add a little water or tamari to thin.

1 cup regular, not soy sauce
1/3 cup granulated white sugar
1 piece of fresh ginger (approx. 3/4-in long by 1/2-in diameter)
3 cloves of fresh garlic (large cloves)
Pare skin off ginger, cut into fine strips, crush, then add it to soy sauce. Do the same with the garlic. Add the sugar to soy sauce. Mix well. Use as marinade for chicken or beef before grilling or baking.
Adjust the amounts of each ingredient as you like it. I like it very thick (lots of sugar). The more sugar you use, the more ginger you ought to add.

Chicken Teriyaki

Serves: 6

Ingredients:

1/4 cup lite soy sauce
3 tbsp prepared spicy brown mustard
1 tbsp firmly packed brown sugar
1/2 tsp ground ginger
1 tbsp sesame seeds
1 sliced thin medium onion
1 cut in half garlic clove
2 tbsp vegetable oil
4 skinned boned chicken breast halves, each about 4 oz
1 spinach and pepper saute (see recip, e for this)

Directions:

In medium bowl, whisk together soy sauce, mustard, sugar and ginger;
set aside.

In large, nonstick skillet, over high heat, toast sesame seeds until golden brown, about 4 minutes; remove from pan and set aside.

In same skillet, saute onion and garlic in oil until soft, about 5 minutes, if desired, discard garlic clove halves. Add chicken and soy sauce mixture to skillet. Cover and simmer, turning chicken over once, until chicken is cooked through.

Meanwhile, prepare spinach and pepper saute. To serve, place chicken on platter, pour sauce and vegetables over chicken and sprinkle with sesame seeds. Place sauteed mixture on platter. Garnish with scallion fan.

The second answer was almost perfect. Add some orange juice concentrate also and a little onion if you want. I actually cook my chicken in this sauce.

Buy it in the bottle from your local supermarket - it will taste way better!
