I want to bring him a lunch at work but I want to get creative with it. (No PB&J) any ideas on how to make a brown bag lunch special? He has been having stressful work issues lately and I want to give him a little bright spot by dropping something off that is nice.

Make him whatever he would like, doesn't have to be fancy... but put a little note in there saying how much you love him or how much you appreciate all he does. It'll be the act that will make him smile, not the actual lunch.

Place food in lidded bowls. Sometimes just a little something different is great. Make enough to maybe stop by and have lunch with him.


CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.





CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1-2 tomatoes, diced (optional)
1-1 1/2 cups Hidden Valley Ranch or Cucumber Ranch dressing In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.

KOOL-AID CAKE

1 box cake mix your choice
1 box powdered sugar
1 pack Kool-Aid, your choice
1 carton or can of milk, your choice

Make cake according to directions on the box. Mix a half a box
of powdered sugar and about half a pack of Kool-Aid, you can mix the whole pack of Kool-Aid to fit your taste. Mix well. Stir in
the milk a little at a time to get the thickness you desire. After cake cools before putting on the icing put a few holes in the cake, so as to let some of the icing soak in the cake.

For some reason it seems that men LOVE lasagna. I have a great recipe for it.....slice him off a huge hunk and put it in some tupperware and give it to him with a drink.

I made this the other day...my boyfriend LOVED it! So did my whole family! It is SO worth it.

Honestly Guys love Subway or any good subshop. Most guys like meatball or chicken parm but if it's a professional job skip the sauce for obvious reasons......i'd recomend turkey or most guys favorate...roast beef as for veggies stick to your basics to be safe, lettuce, tomato, onion.....and maybe hot peppers.

Aww, you're so sweet! Well it's good you're dropping it off, because then you can keep it warm and bring someone he probably couldn't keep in a brown bag. Here's a couple recipes I thought he would really like. Good luck hun!

Ham and Cheddar Calzone

1 lb. frozen bread or pizza dough, thawed
1 pkg. (9 oz.) OSCAR MAYER Shaved Smoked Ham
1 cup KRAFT Shredded Cheddar Cheese
1/4 cup MIRACLE WHIP Dressing
1 egg, beaten
1 Tbsp. KRAFT 100% Grated Parmesan Cheese

PREHEAT oven to 350°F. Place dough on lightly floured surface; flatten slightly with hands, then roll into 12x8-inch rectangle with a rolling pin. (If dough is difficult to roll, cover with plastic wrap and let stand at room temperature for 30 min. before rolling out.) Top dough evenly with ham, overlapping slices slightly and leaving a 1/2-inch border around all sides.
MIX Cheddar cheese and dressing; spread evenly over ham. Moisten edges of dough with water. Starting at one of the long sides of dough, fold 1/3 of the dough over filling and then repeat with other long side of dough. Firmly pinch ends of dough together to seal. Place, seam side down, on lightly greased baking sheet. Cut three diagonal slits in top of dough with kitchen shears. Brush evenly with beaten egg; sprinkle with Parmesan cheese.
BAKE 35 to 40 min. or until golden brown. Cool 10 min. before cutting into six slices to serve.

Turky and Tomato Stacker

4 TACO BELL HOME ORIGINALS Flour Tortillas
2 Tbsp. KRAFT Mayo Real Mayonnaise
6 slices OSCAR MAYER Thin Sliced Honey Smoked Turkey Breast
2 KRAFT Singles
2 lettuce leaves
6 plum tomato slices
3 slices OSCAR MAYER Ready to Serve Bacon, warmed

SPREAD tortillas evenly with mayo.
TOP 1 of the tortillas with 3 turkey slices; cover with Singles, second tortilla, lettuce and bacon.
TOP with a third tortilla, remaining 3 turkey slices and the tomato slices. Cover with remaining tortilla, mayo side down. Cover and refrigerate until ready to serve. Cut into 6 wedges to serve.

Beef and Blue Sandwich

2 slices whole wheat bread
1 Tbsp. KRAFT ROKA Blue Cheese Dressing
2 romaine lettuce leaves
6 slices OSCAR MAYER Shaved Roast Beef

SPREAD 1 of the bread slices with dressing.
TOP with lettuce and meat; cover with remaining bread slice.

Nugget Parmesan Sub

4 frozen Chicken Nuggets
1 submarine roll, split
1/4 cup spaghetti sauce, heated
1 Tbsp. KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
1 Tbsp. KRAFT Reduced Fat Parmesan Style Grated Topping

HEAT nuggets as directed on package.
PLACE nuggets in roll. Top with spaghetti sauce; sprinkle with shredded cheese and grated topping.

Chili con Carne

2 Tbsp. vegetable oil
2 medium onions, chopped
1 medium green pepper, chopped
2 cloves garlic, minced
1-1/2 lb. lean ground beef
1 can (28 oz.) whole peeled tomatoes in tomato sauce, undrained, cut up
1 can (19 oz.) red kidney beans, drained
1 can (14-1/2 oz.) beef broth
1 can (6 oz.) tomato paste
2 Tbsp. chili powder
2 tsp. dried oregano leaves
1 tsp. salt
1 tsp. ground cumin
1/2 tsp. crushed red pepper
6 cups hot cooked MINUTE White Rice
1 cup KRAFT Shredded Cheddar Cheese
1 cup BREAKSTONE'S or KNUDSEN Sour Cream

HEAT oil in 6-qt. saucepot on medium-high heat. Add onions, green peppers and garlic. Cook and stir 5 min. or until vegetables are tender. Add meat; cook and stir 5 min.
ADD tomatoes with their liquid, the beans, broth, tomato paste and seasonings; bring to boil. Reduce heat to low. Simmer, partially covered, 1 hour or until chili is thickened, stirring occasionally.
SERVE over rice. Top with the cheese and sour cream.

Caramel Bliss Brownies

4 squares BAKER'S Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter or margarine
2 cups sugar
4 eggs
1 cup flour
1 cup chopped PLANTERS Pecans or Walnuts
25 KRAFT Caramels (1/2 of 14-oz. bag)
2 Tbsp. milk
1 pkg. (12 oz.) BAKER'S Semi-Sweet Chocolate Chunks

PREHEAT oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Grease foil.
PLACE chocolate squares and butter in large microwaveable bowl. Microwave on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add sugar; mix well. Blend in eggs. Add flour; mix well. Stir in pecans. Spread into prepared pan.
BAKE 30 to 35 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.)
MEANWHILE, place caramels and milk in microwaveable bowl. Microwave on HIGH 2-1/2 min., stirring after 1 min. Stir until caramels are completely melted and mixture is well blended. Gently spread over brownie in pan; sprinkle with chocolate chunks. Cool in pan on wire rack. Lift brownies from pan, using foil handles. Cut into 36 squares. Store in tightly covered container at room temperature.
