Well that all depends on what you like.

Spaghetti is easy, and romantic (think Lady and the Tramp, with "That's Amore" playing in the background)

To make the meatballs just get about a pound of hamburger meat, 1 egg, salt and pepper, Italian seasonings, and garlic. Put the meat in a bowl, crack the egg. Salt and pepper the top (lightly, less is better, you can always add but never take away.) Sprinkle about 1-2teaspoons of Italian seasonings, 1 teaspoon of garlic. Mix it all together. Preheat a skillet and form meat into balls. Add to the hot pan. Cook a few minuets on each side. After they are cooked drain the fat. Set to the side. Boil water as per package of spaghetti. (I like linguine noodles, they are thicker than normal noodles and add a little extra flare.) To the water you boil add a little sprinkle of salt. (Most noodles will cook in about 6-12 minuets.) To test the noodles pull one out and let it cool. Taste it. If it taste done then drain the noodles. After they are drained I put them back in the pot and add a little butter to keep the noodles from sticking. Then you put the meat balls back on and add the sauce on a low heat setting. If it's too high you will have a huge mess. (It will splatter everywhere). Buy a loaf of french bread from the store. They have some great pre-made cheese bread, or even garlic sticks in the freezer section. They're very simple, follow the directions on the back. Pick out a nice wine to go with the meal. You can also pick up a salad kit at your local grocery store. Caesar salad goes great with this meal.
Additions: If you are afraid to cook the meatballs you can buy some that are pre-made, beware though some taste really gross. Or if you don't want the meat balls you can just omit the egg and brown the meat. Either way I'm sure she'll appreciate the effort. ... Watch "Lady and the Tramp" & Try to reconstruct the Spaghetti Scene. If she's a romantic person she will enjoy it very much Good luck!!

If you want to do it nice and can't cook, take her out someplace nice. Then plan farther ahead for the next anniversary so you can cook for her.
