INGREDIENTS:
12 jalapeno peppers, sliced in half lengthwise, seeds removed
8 ounces cream cheese, room temperature
2 eggs, beaten
2 tablespoons water
dash salt
1 cup plain dry breadcrumbs
oil for deep frying
PREPARATION:
Fill jalapeno pepper halves with cream cheese and press halves back together. Combine eggs, water and salt. Dip jalapeno peppers into egg mixture and into breadcrumbs. Place on a cookie sheet and freeze for 2 hours.
Heat oil in deep fryer to 370°. Deep fry peppers in batches for about 3 minutes, or until golden brown. Transfer jalapeno poppers to paper towels to drain.
JALAPENO POPPERS
12 ounces cream cheese, softened
1 (8 ounce) package shredded monterey jack pepper cheese
25 jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry breadcrumbs
oil (for frying)
Remember to wear some disposable gloves when working with jalapeno peppers-- and don't touch your face!
If you don't have any plastic gloves, I have slipped my hands into baggies to protect them from the oils that can really burn and sting for hours.
In a medium bowl, mix the cream cheese, and pepper jack cheese.
In a pot of barely simmering water, blanch the pepper halves for 2 minutes, drain and dry thoroughly.
Spoon mixture into the jalapeno pepper halves.
Put the milk and flour into two separate small bowls.
Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each.
Allow the coated jalapenos to dry for about 10 minutes.
Dip the jalapenos in milk again and roll them through the breadcrumbs.
Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
In a medium skillet, heat the oil to 365 degrees F (180 degrees C).
Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown.
Remove and let drain on a paper towel.
JALAPENO POPPERS

1 (8 ounce) package shredded sharp Cheddar cheese
1/4 cup mayonnaise
15 fresh jalapeno peppers, halved lengthwise and seeded
2 eggs, beaten
1/2 tablespoon milk
1 1/2 cups crushed corn flake cereal

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
In a medium bowl, mix together cream cheese, sharp Cheddar cheese and mayonnaise. Stuff jalapeno halves with the mixture.
Whisk together eggs and milk in a small bowl. Place crushed corn flake cereal in a separate small bowl.
Dip each stuffed jalapeno half into the egg and milk mixture, then roll in corn flake cereal to coat.
Arrange in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.

If you still have a lot of trouble getting breading to stick, well, I don't know what's wrong with your peppers, lol, but I got an idea to fix it: roast 'em. Roast them on a grill or under the broiler like you would bell peppers, then shake 'em in a zip-lock baggie to knock the char off. That will get any waxy skin junk off, and would probably give them a better flavor. It is a bit more work, but the quest for deepfried goodness knows no bounds, right?

Here is a good recipe for jalapenos.. Its kinda a little bit better ...
Get a pair of Gloves to wear to keep your skin from being burned.
Get about 20 jalapenos and make sure that the tips are ROUND (if they are pointy they will be HOT)
Cut them in half and scrape some of the membranes out with a spoon (leave the membranes and just get the seeds if you like them hot)
Stuff halved and seeded peppers with cream cheese and then Wrap a piece of thin bacon around them.
Bake at 350 till the bacon is done and I guarantee you will never want the deep fried variety again..

2 quarts jalapeno peppers
2 cups white wine vinegar
2 cups water
1/2 teaspoon pickling salt or pickling spices
4 cloves garlic
Slice peppers or leave them whole.
(To prevent bursting, cut two small slits in whole peppers.).
Pack peppers tightly into clean, hot jars.
Combine vinegar and water; heat to a simmer.
Do not boil.
Pour hot vinegar over peppers, leaving 1/2 inch headspace.
Add pickling salt and a clove of garlic to each jar then seal.
Process in boiling water bath for 10 minutes.

get your peppers and cut the tops off and use a skewer or thin knife to scrape out the insides. Stuff with cream cheese or whatever kind you want. Beat 1 egg in a bowl. Put flour in one bowl and instant potato flakes in another. Roll the stuffed jalepeno in the egg. Next roll the wet jalepeno in the flour. Gently shake of excess flour. Rollin egg again. Roll in potato flakes and deep fry. yummy

forget the poppers.
Get cream cheese / lemon juice / mushrooms chopped up / pre-cooked shrimp chopped / mix in mixer / add a little ceyenne pepper....not a lot....just a little bit...it brings the flavors together. Now, cut the jalapenos in half....fill with mixture. Wrap with once piece of bacon......then....cook on a grille......it's yummier.
