season chicken breast (or wings) with salt and pepper.
now put the chicken on a cookie sheet, drizzled with a little olive oil. Bake chicken of 350 until chicken is cooked through and the juices are clear.
Now melt 4 tablespoons of butter and 4 tablespoons of hot sace ( i use frank's red hot) in the microwave.
now pour the mixture of the chicken making you sure you coat the chicken all over. Then put chicken back in oven and bake until the sauce is hot and has turned a night golden brown color.

This is really good. I make this alot. I serve it with a salad. (I use romaine lettuce, celery and carrots and toss with light ranch or blue cheese dressing) Really a good meal to serve if you or friends are on a low carb diet.

Baked Buffalo Chicken (from Weight Watchers)

4 (4-ounce) skinned, boned chicken breast halves

1/4 cup hot sauce

1 tablespoon white vinegar

1 tablespoon stick margarine, melted

1 teaspoon celery seeds

1/8 teaspoon pepper

1/2 cup fat-free blue cheese dressing

Preheat oven to 400° F.

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken; cook 4 minutes on each side or until browned. Place chicken in an 11x17-inch baking dish coated with cooking spray.

Combine hot sauce and next four ingredients; pour over chicken. Bake, uncovered, at 400¼ for 25 minutes. Serve with blue cheese dressing.

Yield: 4 servings (serving size: 1 breast half and 2 tablespoons dressing).
