I'm a cookie baker and tend to turn up my nose at mixes and prepackaged baked goods, but these are both good and really easy because much of the measuring and mixing is done by the cake mix company. LEMON CRISP CAKE MIX COOKIES Start with a lemon cake mix which requires 1/3 – 1/2 c. oil, 2 eggs, and water. Mix cake mix, recommended amount of oil, and eggs, omitting water, and stir until no lumps of dry cake mix remain. Roll resulting dough into one-inch balls. Place them on an ungreased cookie sheet (lined with parchment paper or foil for easy clean-up is fine) about 2 inches apart. Preheat oven to 375°. Pour 1/4 c. white sugar into a flat dish or saucer. Press the flat base of a drinking glass into the sugar, then use it to flatten the cookie balls to 1/4 inch thickness. (If the sugar refuses to stick when the glass is first used, touch it lightly to a cookie, or dampen it.) The resulting flat cookie with a slight layer of sugar will be small, about 2 inches. Bake 5-7 minutes, until edges are just slightly browned. Let cool one minute, then remove from cookie sheets. When the cookies are completely cooled, set a newspaper or other drip catcher beneath the cooling rack and move the cookies as close together as they’ll go without overlapping. Mix 1 c. confectioners sugar with 2-3 Tbsp. lemon juice. Drizzle in a thin zigzag pattern across cookies. Immediately sprinkle with colored or white sugar before the icing can set.

I made squash cookies with leftover squash. Just added it to some flour, an egg, a bit of cooking oil, a bit of baking powder and some sugar. You can tell how much flour and oil by the consistency. I also added chocolate chips. Then I put spoonfuls on a cookie sheet sprayed with Pam and flattened them down a bit. Baked at 350 for about 15 minutes. I enjoyed them but the "others" in my home thought it needed more sugar.

go to pillsbury site and use the fridge cookies...very easy and no worries about burning the last batch. Also, you may want to check with your daughters school, here in Arizona they don't allow homemade items, nor to they allow junk food, look for health snacks..
