Pouring any hot coffee over ice shocks the coffee and really brings out the least desirable qualities. When you start with a COLD BREWED coffee to begin with, the best coffee taste comes through without any harshness or bitterness. Use a product like the Toddy Coffee System. Start with one pound of freshly roasted, (from your local roaster, if possible) coarse ground coffee in the brewing device with a special filter. Add 9 cups COLD filtered water and steep overnight. The manufacturer says to brew 12 hours. I like mine strong and let it go 18 or 24. The resulting product is an espresso strength cold brewed coffee. It stores in the refrigerator for about 10 days. Here is a link from Wikipedia about Toddy Coffee:

I like to steam my Toddy with some milk at my espresso machine, and I love it iced Americana style. Basically if someone isn't too keen on the coffee taste, you want to serve it with some cream and sweetener. You can use vanilla syrup (which mixes up in iced drinks nicely) and some half & half for an iced vanilla breve latte.
Also here is a website with some more Toddy recipes:

I make the coffee strong, then pour it over just enough ice, to let the ice melt and the coffee be cold then add milk and it's great with flavored cream too. Sugar. Or even add an actual instant flavored coffee just for the flavoring.

The problem with ice coffee is that if you pour hot coffee over ice, the ice melts and waters down the coffee - best to make it using espresso, which is stronger than regular coffee, so when it melts the ice, it still has the coffee flavor.

How about buying cans of Iced coffee from Nescafe, or from coffee joints? It is hard to make good coffee that is of the same standard as those from Coffee Beans, Nescafe.

make your coffe double strength so it doesn't dilute too much when you pour it over ice, and sweeten it before you ice it down. Its too hard to get sugar to disolve in cold drinks. Serve with milk or cream, and add a drop of vanilla extract to give it some extra sweetness
