Marinade

INGREDIENTS:
1/2 cup ketchup
1/2 cup water
2 TB. brown sugar
2 TB. cider vinegar
2 TB. worcestershire sauce
1 clove garlic, minced, or use equivalent dried granules or powder
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne pepper
pork roast, loin, pork shoulder, etc.
PREPARATION:
Combine ketchup, water, brown sugar, vinegar, Worcestershire sauce, garlic, salt, pepper, and cayenne. Place pork roast in a large food storage bag or in a nonreactive dish. Marinate pork overnight.
Put marinated pork roast in the crockpot; cover and cook on LOW for 8 to 10 hours.

I use Bar x BBQ rub from Townsend Supplies inc. The address is 8 East Main Street Oxford Arkansas 72565 phone 870 258 3523.
You will need to call John Hatfield before noon if you want to catch him.
His regular BBQ rub is great on beef but I use the Bar X on pork and chicken. The trick with BBQ rub is you need to let the pork butt set with the seasoning on it overnight before you put it on a smoker.

Marinate for a few hours with cuban Mojo Criollo (marinating sauce in your Latino food section), you can rub it with some "Badia's Complete Seasoning" or "Sazon Goya with annato y coriander"
And flavor injected or stuffed with raw garlic cloves...

YUMMY! It becomes Cuban Roast Pork...and you can keep the leftovers and go online and make Cuban Sandwiches for lunch (or Dinner) with them

first depends on how you care cooking it if you are smoking it don't put anything on it just wrap it loosely in tin foil.
But for the over you can use salt and pepper are the best for a old flavor, or a but any sauce you put on needs to be near the end so it won't burn if it has a suger base or ketchup. Lawerys 17 season is good on it to bake too.
