Ingredients
1/2cup cold butter
1pouch (1 lb 1.5 oz) Betty Crocker® oatmeal chocolate chip cookie mix
1egg
2packages (8 oz each) cream cheese, softened
1cup sugar
2eggs
1teaspoon vanilla
Directions
1 . Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2 . In large bowl, cut butter into cookie mix using fork or pasty blender. Stir in 1 egg until mixture is crumbly. Gently spoon 3 cups crumb mixture into pan; press into bottom of pan. Bake 15 minutes.
3 . In small bowl, beat cream cheese, sugar, 2 eggs and the vanilla with electric mixer on medium speed until smooth. Pour over cookie crust. Spoon remaining crumb mixture over cream cheese.
4 . Bake 25 to 30 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

Ingredients
1pouch Betty Crocker® chocolate chip cookie mix
1/2cup butter or margarine, softened
1egg
1/2cup coarsely chopped pecans
24caramels, unwrapped
1tablespoon milk
3/4cup pecan halves
3tablespoons semisweet chocolate chips
1teaspoon shortening
Directions
1 . Heat oven to 350°F. In medium bowl, stir together cookie mix, butter, egg and 1/2 cup chopped pecans until soft dough forms. Press evenly in ungreased 8-inch square pan. Bake 28 to 33 minutes or until golden brown.
2 . Meanwhile, in 1-quart saucepan, heat caramels and milk over low heat, stirring frequently, until melted and smooth. Remove from heat.
3 . Carefully spread melted caramels evenly over warm bars; sprinkle with pecan halves. Cool completely on cooling rack, about 1 hour.
4 . In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth. Drizzle over bars. Let stand about 30 minutes or until chocolate is set. For bars, cut into 4 rows by 4 rows.

To microwave caramels (for step 2), place caramels and milk in 2-cup microwavable measuring cup, microwave uncovered on Medium-High (70%) 2 minutes; stir. Microwave 30 to 60 seconds longer, stirring every 15 seconds, until melted and smooth.

Chocolate Cream Cheese Crescents
Wake up those taste buds with crescent rolls kissed with chocolate and coffee!
Ingredients:
Rolls
1/4cup powdered sugar
4oz. cream cheese, softened
1 1/2teaspoons coffee-flavored liqueur or cooled strong coffee
1/2teaspoon vanilla
1/4cup finely chopped macadamia nuts
1(8-oz.) can Pillsbury® Refrigerated Crescent Dinner Rolls
Glaze
1/4cup semi-sweet chocolate chips
1/2teaspoon shortening or oil
Preparation Directions:
1.Heat oven to 350°F. Lightly grease cookie sheet. In small bowl, combine powdered sugar, cream cheese, liqueur and vanilla; blend well. Stir in macadamia nuts.
2.Separate dough into 8 triangles. Spoon 1 heaping tablespoon cream cheese mixture onto shortest side of each triangle. Loosely roll up, starting at shortest side and rolling to opposite point. Place, point side down, on greased cookie sheet; curve into crescent shape.
3.Bake at 350°F. for 12 to 15 minutes or until golden brown. Cool 5 minutes.
4.4. Meanwhile, in small saucepan over low heat, melt glaze ingredients; stir until smooth. Drizzle over warm rolls. Serve warm or cool. Store in refrigerator.

Warm Apple and Dried Cherry Crisp
SERVES: 6
ingredients
1 1/2 cups rolled oats
3/4 cup light brown sugar
1/2 cup all-purpose flour
2 teaspoons cinnamon
3/4 teaspoon salt
1 stick (4 ounces) unsalted butter, melted
4 Granny Smith apples--peeled, cored and cut into 1-inch chunks
1/2 cup dried tart cherries (2 ounces)
1/2 cup granulated sugar
2 tablespoons honey
1 tablespoon fresh lemon juice
Pinch of freshly grated nutmeg
Unsweetened whipped cream
directions
Preheat the oven to 400°. Set a baking sheet on the bottom of the oven to catch any spills. In a medium bowl, combine the rolled oats with the brown sugar, flour, 1 1/2 teaspoons of the cinnamon and the salt. Add the melted butter and toss until evenly moistened, then pinch the topping into large crumbs.
In a bowl, toss the apples with the cherries, granulated sugar, honey, lemon juice, nutmeg and remaining 1/2 teaspoon cinnamon. Spread the apples in a 9-inch deep-dish pie plate. Scatter the crumbs over the apples all the way to the edge. Bake for about 45 minutes, or until the apples are tender, the filling is bubbling and the topping is golden. Let rest for 20 to 30 minutes. Serve warm or at room temperature with whipped cream.
MAKE AHEAD The baked crisp can be refrigerated overnight and rewarmed.

Here's a good desert recipe for ya:
Cornbread & Black Bean Chile
Serves 6
1 lb lean ground or finely chopped beef
1 large onion, chopped
1 red bell or Anaheim pepper, chopped
2 cloves garlic minced
1 15 oz can black beans, drained
1 12 oz can V8
1 28 oz can tomatoes
1 4oz can whole green chilies, chopped
1 tsp cayenne
2 tsp cumin
1 tsp garlic powder
1 tsp salt
Preheat Dutch Oven to 400 degrees. Brown meat, then add onion and peppers, cooking 10 minutes. Add remaining ingredients, bring to a boil and simmer 30 minutes. Combine cornbread ingredients in bowl or baggie
1 box Jiffy Cornbread Mix.
1/2 cup milk
1 egg
Place cornbread batter on top of chili, replace the lid and bake at 400 degrees until brown on top (appx. 30 minutes).

This is my favorite recipe! I had guys who said they wanted to marry me because of these cookies - the cherry or black cherry Jello makes the best - and I use ½ cup margarine instead of butter and ¼ cup shortening - makes 'em more chewy than crisp - and they're even better that way.

Crisp Pastel Cookies
(JELLO COOKIES)
¾ cup shortening (part butter or margarine)
½ cup granulated sugar
1 small (3 ounce) package flavored gelatin
2 eggs
1 teaspoon vanilla
2½ cups flour
1 teaspoon baking powder
1 teaspoon salt
Heat oven to 400º F.
Mix the first five ingredients thoroughly. Blend in the dry ingredients. Roll dough into ¾” balls. Place two inches apart on ungreased baking sheets. Flatten each with the bottom of a glass dipped in sugar. Bake for 6 to 8 minutes. Yields up to five dozen.

This is so simple to make and it tastes wonderful...
Cherry Pineapple Crumble
1 20oz. Can Crushed Pineapple (do NOT drain)
1 20oz. Can Cherry Pie Filling
1 Box White or Yellow Cake Mix
1 Stick Butter
1 – 1 ½ Cups Powdered Sugar
Warm Water
Preheat oven to 350 degrees. In a cake pan (8x13) spread crushed pineapple and juice. Spread cherry pie filling over pineapple. Sprinkle cake mix (dry) over fruit. Cut stick of butter into thin pats and top cake mix with pats of butter. Bake 30 minutes.
After the crumble comes out of the oven mix the powdered sugar with enough warm water to make glaze. Pour glaze over the crumble. Best served at room temperature. Top with ice cream if desired.

I have been using this recipe for a few years now and it seems like I never make enough!! I am requested to bring it to any function I am attending. It's really sweet so you might want to cut the pieces small.
Peanut Butter Fudge

Cook Time: 4 minutes
Yield: 64 (1-inch) pieces
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon pure vanilla extract
1 pound confectioners’ sugar
Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and confectioners’ sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

Make a box of brownies, add walnuts, or not. Spread in 9 x 9 dish or pan. Spread raspberry yogurt (or raspberry sorbet) over the top of brownie mix when it has cooled. Crush some chocolate graham cracker cookies and sprinkle on top of yogurt. Put in freezer. Keeps for days. When ready to serve, cut in bars, put on plate and add a few fresh raspberries. If raspberries are not in season, use strawberry yogurt and strawberries.

Lemon or Chocolate Fluff
1 gram cracker shell ( deep dish )
Mix 1 package of lemon or chocolate instant pudding with 2 cups of milk, mix well.
add 1/2 a container directly into the pudding and blend.
pour into gram shell
top with remaining 1/2 cool whip
you can add chopped pecans to the top of the lemon or grated chocolate to the chocolate.

Oh my goodness this stuff is sooo good. I haven't made it in forever, but it sounds great. My mom made it every summer and it is so rich and delicious.
Banana Split Cake (it isn't really a cake, it's a refrigerated dessert... no baking required!)
INGREDIENTS:
for crust:
1 (16 ounce) package graham crackers, crushed
1 cup margarine, melted
for filling and toppings:
1 (20 ounce) can crushed pineapple, drained
6 bananas
1 (8 ounce) package cream cheese
2 cups powdered sugar
1 (12 ounce) container frozen whipped topping, thawed
1/4 cup chopped walnuts -optional
8 maraschino cherries - optional
---------------------------------------------------------------------
DIRECTIONS:
Combine the crushed graham crackers and melted margarine. Pat into the bottom of one 9x13 inch pan.
Beat the cream cheese and powdered sugar together until light and fluffy. Spread over the top of the vanilla wafer crust. Spoon crushed pineapple over the cream cheese layer. Then layer sliced bananas over the pineapple. Cover with the non-dairy whipped topping and sprinkle top with chopped walnuts and maraschino cherries.
Refrigerate for at least one hour before cutting and serving. Refrigerate and cover leftover dessert with plastic wrap or foil. Mmm... good! Serves at least 14.
Also really, really good and fun:
DIRT CAKE (again not really a cake, more of a pudding dessert)
1 (20 oz.) pkg. Oreo cookies, crushed
1/4 c. butter
1 c. confectioners sugar
1 (8 oz.) pkg. cream cheese, softened
2 sm. pkgs. French vanilla instant pudding
3 1/4 c. milk
1 (8 oz.) Cool Whip, thawed
gummi worms, optional
Crush cookies until resembles dirt (food processor or blender). In mixing bowl, beat together butter, sugar and cream cheese until smooth. In another bowl, beat together milk, pudding and topping. Mix both bowls together. In a large serving bowl, (or a sand bucket or new clay planter) layer first cookies and alternate with pudding mixture ending with cookies. Stick gummi worms into the "dirt" for a fun treat.
Great Birthday Cake for kids.

get a graham cracker crust, box of pudding (mix according to directions), tub of cool-whip(put some in the pudding mix. Pour pudding into crust then put the rest of the cool-whip on top for more flavoring add hershey syrup (drizzle on)
u could use nuts on top too if u prefer!!

My friend ZLady gave this to me many moons ago and I thought I woudl share it with you!
5 Minute Fudge
12 oz. bag chocolate chips
12 oz. bag butterscotch chips
1 can sweetened condensed milk
nuts, raisins, craisins, whatever you like in your fudge
Heat condensed milk over medium heat until it just starts to boil, add 12 oz. chocolate chips, 9 oz. butterscotch chips, nuts, etc. stirring constantly until chips melt. Pour into lightly buttered 9X9 pan, cover with plastic wrap and refrigerate. Enjoy!
