Healthiest? Cod Liver Oil, but I don't think you'll like it. Most restaurants use canola oil. Olive oil won't hold up to the heat necessary for deep frying. It has a low smoking temperature. Peanut oil is great for flavor, but not so great if you have cholesterol problems.

Grapeseed mixed with a little canola. The grapeseed has a much higher smoking point then olive, while retaining very similar health qualities.
Just use a saute pan and fry in small batches.
