How nice of you to remind me - I picked up a few of these at a school bake sale on the weekend - they were SO good. I'll now have to make some. Here are three slightly different recipes.
NO BAKE CHOCOLATE OATMEAL COOKIES
2 cups sugar
1 stick butter (1/2 cup)
1/2 cup Pet milk
1 teaspoon vanilla
2 1/2 tablespoons cocoa
1/2 cup peanut butter
3 cups oats
In a medium saucepan, combine all ingredients except peanut butter and oats and cook over medium heat. Let boil for 5 minutes, stirring constantly.
Remove from heat and stir in peanut butter and oats.
Spoon out quickly onto wax paper or aluminum foil. Cookies will harden as they set.
No-Bake Chocolate-Oatmeal Cookies (From Quaker Oats)
1 1/2 cups granulated sugar
1/2 cup (1 stick) butter
1/2 cup low-fat milk (2 percent or 1 percent)
1/3 cup unsweetened cocoa
3 cups quick-cooking or old-fashioned rolled oats (not instant)
In a large saucepan combine sugar, butter, milk and cocoa. Bring to a boil over medium heat, stirring frequently. Continue to boil and stir for 3 minutes.
Remove from heat. Mix in oats. (At this point, if using old-fashioned oats, let the mixture cool in the pan for about 5 minutes. If using quick-cooking oats, continue immediately.)
Quickly drop by tablespoons onto sheets of waxed paper or greased cookie sheets. Let stand until firm. Store tightly covered.
Makes about 3 dozen cookies.
NO BAKE CHOCOLATE-COCONUT COOKIES
2 c. sugar
1/2 c. milk
1/2 c. butter
1 tsp. vanilla
2 c. oatmeal
3 tbsp. cocoa
1 1/2 c. coconut
1/2 c. chopped nuts (optional)
Bring first 4 ingredients to a boil and cook 1 minute. Pour over 4 dry ingredients and mix. Drop on wax paper and chill.

Here's one recipe I found:
No Bake Oatmeal Cookies
1 Stick of margarine
2 cups Sugar
4 tbsp. Cocoa
1/2 cup Milk
1/2 cup Peanut butter
2 1/2 cups quick oats
1/2 cup chopped nuts
Melt margarine, add sugar, coca and milk, bring to boil
let bubble for 1 1/2 minutes. Add peanut butter, oats and chopped nuts.
Mix well. Drop by teaspoonfuls onto waxed paper. Let set in refrigerator.
Here's one for Chocolate Oatmeal cookies:
Chocolate Fudge Oatmeal Cookies
No baking required for these fudgy oatmeal cookies!
INGREDIENTS:
2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 ounces butter
1 teaspoon vanilla extract
1/2 cup chopped pecans
2 1/2 cups quick-cooking oats
PREPARATION:
Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla and chopped nuts. Add oatmeal and stir to blend thoroughly.
Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies.
It calls for nuts, but you could probably switch nuts or add more oats (or less liquid) to make up for leaving them out.
