Parsley is pretty much just for decoration, anything you use in place of it will change the taste. If you don't want to change the taste, just don't use anything.

Fresh chopped parsley or you can use the following although it will effect the flavor:
Chervil
Chives
Cilantro
Dill
You can use dried, however fresh is better.

NO!! Do not listen to these people LOL! Cilantro and dill will totally change the taste of your ranch dressing. If you can't get parsley at all (fresh or dried) just do without.
