If I made a stop payment on a check once, and the person re-deposited the check, would it go through or would the original stop payment still be valid?

Only if the stop payment was done before the check was submitted. However remember you mey want to call your bank and ask them how long is a stop payment good for cause @ my bank it's good for only 3 or 4 months.

The stop payment would be valid if it went through as a check. BUT with the check they now have your account information and if the redeposit goes through electronically some banks wouldn't have stopped that portion and then it could go through. If both times they try with the phyiscal paper check then both will be stopped.

Technically a check is good only for 90 days. The stop payment should last that long but if you are in doubt, ask your bank.

check with your bank, but i'm sure the first stop payment is good enough. remember you gave them the check number and if they try and re-deposited it the same check number will come up.
