TOMATO CELERY SOUP

2 tbsp. butter
1 sm. chopped onion
1 (10 1/2 oz.) can tomato soup
1 tsp. minced parsley
1/8 tsp. pepper
1/2 c. finely chopped celery
1 tsp. sugar
1 tbsp. lemon juice
1/2 tsp. salt
1 can water

Saute celery and onion in butter, do not brown. Add tomato soup, water, parsley, lemon juice, sugar, salt and pepper. Simmer 5 minutes. Celery will remain crisp.
Top with unsweetened whipped cream and chopped parsley.

I have made tomato soup my whole life and I've always thickened it with milk and flour . probably would be about the same. Use tomatoes out of a can let them boil and add the whipped cream slowly or it will curdle.

I LOVE cream of tomato soup, so I would think you could use whipped cream instead of milk to make it extra rich & creamy...sprinkle with chives & a dollop of whipped cream & serve with garlic flavored crackers....Yummy!!
