Lasagna
Yield: 6 servings
10 lasagna noodles
12 ounces ricotta
1 egg, lightly beaten
1/2 cup Parmesan, grated
12 ounces Mozzarella, grated
3 cups meat sauce
Prepare noodles as instructed on package. Drain. In a medium bowl, combine ricotta, egg, parsley, 1/2 cup Parmesan and salt and pepper. Spread 3/4 cup meat sauce in bottom of 9 by 13 inch baking dish. Lay 3 noodles down in pan and spread with ricotta mixture. Sprinkle with Mozzarella and top with meat sauce. Repeat procedure for one more layer ending with last three noodles and then sauce. Top with remaining Mozzarella and 1/2 cup Parmesan. Bake for 45 minutes or until bubbly at 375 degrees. Remove from oven and let lasagna stand for 15 minutes
MEAT SAUCE
1 pound ground beef
1 pound spicy sausage
1 large onion, chopped
4 cloves garlic, minced
1 bay leaf
2 teaspoons dried basil
2 teaspoons dried oregano
2 tablespoons olive oil
3/4 cup red wine
3 (28-ounce) cans crushed tomatoes
1 carrot, chopped
Salt
Pepper
Heat oil in a large heavy pot over medium high heat. Brown ground beef and sausage. Stir in onion and cook for 4 minutes. Stir in garlic, bay leaf, basil and oregano. Add wine, tomatoes and carrot. Bring to a boil and reduce heat to medium. Simmer uncovered until sauce has thickened about 45 minutes. Taste and season with salt and pepper.

MEXICAN LASAGNA
Meat of choice, or vegetarian
Cheese, variety to choice of cook
Tortillas
Salsa
Olives
Avocados
Sour cream
1 round deep dish
Refried beans
1. Make creamy guacamole with the sour cream and avocados.
2. Grate the cheese and mix together.
3. In deep dish layer:
salsa
tortilla
refried beans
tortilla
meat or vegetables
salsa & cheese mixed in
tortilla
guacamole
tortilla
salsa
tortilla
cheese mix
top with olives
potato caserolle
32 oz bag frozen hash browns
1 chopped onion
1 can cream of chicken soup
1 stick butter
1 16 oz container sour cream
2 cups shredded cheddar cheese
1 teas salt
Mix all together and spread into a large, greased casserole dish. Bake at 350 for 40 minutes. Top with:
3 cups crushed corn flakes
1 stick melted butter
Mix well and spread on top of casserole. Bake an additional 20 minutes or until brown.
This will disappear in about 10 minutes. Sometimes I have to double it to have enough for all the boys.

4 celery sticks finely chopped
2 carrots finely chopped
1 onion finely chopped
2 cloves of garlic crushed
1 sprig rosemary
1lb 9oz beef mince
12oz pork mince
1bottle red wine
2^400g tins of chopped tomatoes
7floz beef stock
salt and black pepper
bechemel sauce
13/4 pints of milk
2 bay leaves
1/4 onion
pinch of nutmeg
2oz butter
2oz plain flour
14 slices of fresh pasta
3 balls mozzarella cut into small cubes
handfull grated parmasan
2tbsp butter
METHOD
Heat the olive oil in a frying pan and saute the cellery carrotsand onion for 15 mins add garlic +rosemary
add beef +pork mince +cook untill browned
pour in the wine stir wellcook for45 mins
once the wine has evaporated add tomatoes +stock salt +pepper
cook slowly for 2hrs
to make bechmel sauce put milk in large saucepan add bay leaves onion +nutmeg gently bring to boil
in a seperate pan make a roux with the flour +butter pour the milk mixture in a little at at a time stirring continually
blanch the pasta in salted boiling water for three mins
then layer in a casserole dish
bechamel sauce onthe bottom then pasta strips over the top
followed by mozzerella+parmasan and then the meat ragu
repeat this until ingrediants are used up
put in the oven for 30 mins gas mark 4 180c 350f

Golden Lasagna:
INGREDIENTS:
6 lasagna noodles
1/4 cup chopped onion
1 (4.5 ounce) can sliced mushrooms, drained
3 tablespoons chicken broth
1 (10.75 ounce) can condensed cream of chicken soup
1/3 cup milk
1/2 teaspoon dried basil
2 cups diced chicken breast meat
1 pound ricotta cheese
1 1/2 cups shredded Cheddar cheese
1/8 cup grated Parmesan cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
In a small saucepan, saute onion and mushrooms in chicken broth. Remove from heat. Stir in soup, milk and basil. Mix well. Set aside.
In a lightly greased 9x13 inch baking dish, arrange 3 cooked lasagna noodles. Layer as follows: 1/2 the chicken, 1/2 the ricotta cheese, 1/2 the Cheddar cheese, 1/2 the Parmesan cheese and 1/2 the mushroom/soup mixture. Add the other 3 lasagna noodles and repeat layers. Bake uncovered in the preheated oven for approximately 50 minutes.
