Yes you can and the difference is that you will have a richer tasting cake. Most recipes call for oil becuase more and more people are healt conscious and butter is not as healty, but oh it tastes so so good. The butter should be room temperature and NOT melted unless specified in the recipe. The only time you can not substitute is when shortening is called for (as in pie crust recipes) then then shortening is needed to keep it's shape and texture to make a flaky crust.

Absolutely. In fact, I think it tastes better with butter than with oil. If your butter is hard, just warm it up first so it'll mix in well!
