Does this sound appealing, or should I try something else? Corned beef brisket cooked in a crock pot covered in a gumbo mix. If you think this is a bad idea, let me know or if you have any better recipes for corned beef brisket in the crock pot, please share. Thanks.

I think you are mixing too many different flavors. Corned beef has a really strong flavor of its own and doesn't really seem to go with a gumbo mix. I usually put potatoes, carrots and the corned beef, and the spice packet from the corned beef in the crock pot and cook 6-8 hours or until tender. If you want to you can add some cabbage for the last 1-2 hours. The corned beef turns out well and adds a lot of flavor to the carrots and potatoes.

Corn beef might go well, if it's seasoned right. Sausage and shrimp are always a good choice for gumbo though. I personally like the classic corn beef and cabbage combo(traditional but excellent).

Try using pepperoni in gumbo along with the sausage...it's a little different but gives it a nice kick.

Glazed Corn Beef
Glazed corn beef straight from Mother Ireland. Beer and potatoes, anyone?

3 1/2 to 4 lbs. corned beef brisket
Water to cover brisket
2 tbs prepared mustard
1 1/2 tsp horseradish
2 tbs red wine vinegar
1/4 cup molasses

In slow-cooking pot, cover corned beef with water. Cover and cook on low for 10 to 12 hours. Drain cooked corned beef; place on broiler pan or oven-proof platter. Combine mustard, horseradish, wine vinegar, and molasses. Brush on all sides of meat. Brown in 400° oven for about 20 minutes or until it begins to brown; brush with sauce several times while browning. Makes 6 to 8 servings.

I have to go with the majority here. Corned beef, in a crock pot w/ potatoes. & cabbage also some onion & garlic. like the one who wrote to cook corned beef first you can put the onion & garlic with it. also for the crock pot those crock pot cooking bags are simply wonderful. they make cleanup a snap

cook something else, like cornedbeef with potatos or even cabbage is good eats.
