It means that human beings were created to resemble God in certain ways. To reflect Him sort of like a mirror reflects your image.
Sin entered the picture, so now the reflection is warped and distorted, but human beings do still reflect the image of God in several ways:
The capacity to think and reason
The ability to act for the good of others at the expense of self-interest
The capacity for emotion and appreciation of beauty
Creativity and inventiveness
to name a few!

Human beings are made in the image of God. In the world of the ancient Near East, an image was a representative of something. Thus, humans are God's representatives in the world. It does not mean we are divine. It does mean we are like God in that we are persons who think, feel, and act.

Originally, when God first created man, he created us like him, perfect, in his image. However, Adam and Eve denied and went against Gods orders and therefore committed what is now known as "sin". The only perfect, pure, merciful, loving is God.

Most people think it means we resemble God in physical appearance. This is a rather shallow, egotistical viewpoint. God's image represents the manner in which God decided to make us. [Because of this, we can deduce that God has an interesting sense of humor.]

It's a feeble attempt to claim one's own existence is somehow more important than others. It's the same argument as those used by people and countries which killed jews, owned slaves, and practiced imperialism and colonialism.
