The Pentax P3 is an awesome camera for beginners and hobbyists alike. Just don't waste your time on a K1000. The Nikon N63 is pretty nice too. The few students in my photo classes unfortunate to have the Canon rebel hated it with a passion, some swear by them though. It's all in what you want to spend and which you are most comfortable with. Check out your local camera shops and handle them and really look at them. One is likely to jump out at you. Good Luck!

Your local Wal-Mart, Target or other discounter will have the 35mm Canon SLR (which comes with a lens and can be used manually) and could possibly have the Nikon SLR as well.
For me, I chose the Canon for the very WIDE Variety of lenses that can be purchased and used, and the same lenses for the Canon Rebel 35mm can also be used on the Canon Digital Rebel SLR as well -- so that could be a consideration if you enjoy photography as I think you will (especially after this class -- very creative and fun).
These are very inexpensive -- about $200 or less. Again, look on the Web too -- use such sites as shopping.com to do your comparison of prices.

You can get a good condition Canon Rebel (the film type) for around $100 now with a lens.
Go to a local camera shop and see if they have any customer trade-ins.
I'm partial to any of the EOS based canon cameras. They've gotten cheap, and there are a million lenses to be had for them. I learned on an Elan7 with a 28-80 lens, and I still love using that rig.

i can recommend you a couple from nikon. F80 and F65. but i would highly recommend f80 from the 2 of them cos the build is more solid, it has battery pack, more professional like and it has most of the features necessary to start photography with without the hassle of having too much feature to handle. it is autofocusing camera but with manual control override (means you can use manual focus and manually setting the aperture and shutter speed as well as ISO from the camera).
if you like manual camera, i can recommend nikon fm2a or fm3. but for a lady and my experience teaching my girlfriend, i would search for nikon FG in good condition. all three listed in this paragraph are manual camera

Either Nikon or Canon is the way to go. Both are great brands and if you look around eBay, B&H Photo, etc... you can find used ones in great condition fairly cheap.

Canon A1 body and a fix 50mm f1.8 lens, you can buy this set up used for under $250.00 on Ebay in good condition.
Nikon FM10 and a fix 50mm f1.8 lens.
If you can afford, go for Nikon FM3A body and a fix lens.
