Our church has shephard groups and I'm heading up my group who is responsible for making the wed. night meal once a month. I really could use a hand on some menu ideas.

meat is pretty expensive, you can skimp on that, otherwise if you must have meat, get a ham, it has lots of flavor, and a little bit goes a long way, you can put ham in soup to flavor it too.

lentil soup
rice and beans
corn and zucchini and couscous is quick adn cheap

minnestroni, or any kind of rich hearty soup along with bread makes a nice inexpensive meal

hotdogs

chicken cooked in some type of sauce (chicken provencal, chicken curry, chicken jambalaya, etc.) with rice

Pasta is usually what you want to go for when you want food to stretch for a lot of people. Ziti is always an easy inexpensive meal. Try not to use ricotta cheese or onions unless you're going to make pans without it, there are a lot of people who don't eat that. Just use the Ziti noodles, pasta sauce, meat and mozzarella cheese.Use ground turkey instead of ground beef, it will come out a little cheaper and it's healthier. Nobody ever notices the difference. You can buy a couple of those pre-tossed salads, throw them in a bowl and get some store brand dressing and some garlic bread.

The first thing I would do to ensure a successful turnout is to check other local organizations and see what they are doing. You are more likely to be successful having something unique than having the same Pancake or Spaghetti dinners everyone else is having. People get bored.

Baked Ziti night was always a hit in our church. There was always a good turnout and most children will eat it without protest. There are few ingredients, not too expensive and it's really easy to put together and bake off. You need a plate, fork and napkin.. no knives... no spoons and you can eat it standing up if you need to. Easy. Throw in a couple loaves of garlic bread and a green salad and you have a nice meal.

I create menus out of the weekly sale circular from your local supermarket. You could build a menu just from that.

You could have things like ice cream for dessert or whatever dessert was on sale at the supermarket, such as Mrs. Smith, Pepperidge Farm, etc.

You could also visit the Farmer's market and get garden salad ingredients such as lettuce, tomatoe, or things from the salad bar like carrots, and dressing on sale.

Bread of course.

If you can cook a nice chicken salad with chips and green beans on the side.

Go with casserole dishes because they last a long time. If you go to the library or even a bookstore they have cookbooks especially for all casserole dishes. Chicken is a cheap meat -- find a book on 100 different ways to cook chicken (again at the bookstore). Veggie dishes can be inexpensive too.

Hot dogs w/ potato salad & baked beans.

Chili.

Spaghetti w/ red sauce.

Chicken & Dumplings.

Chicken & Rice.

Tacos.

Nachos.

Red Beans & Rice.



Side dishes: beans, potato salad, mashed potatoes, chips, bread.

Desserts: pudding, day-old cake from the bakery.

Pasta dishes are always nice and cheap. Serve with a starter salad, with a homemade vinigar dressing.

You can cook a very large roast, slice it very thinly and serve with buns.

Soup is easy to make in large batches and inexpensive. Or a nice beef stew with potatoes, carrots, ect.
