i prefer horseradish cheddar....EXCELLENT with roast beef sandwiches....smoked muenster is very good with salami....of course we musn't forget the ever popular dick cheese...a classic in many countries.....

Chevre (goat cheese)! So good and low fat too! I've eaten just that for lunch before with some bread.
It's also good for cooking with, put on top of some steak or grilled chicken. So good.

I can eat Gouda, Colby Jack, and Muenster all day too. I like um salty

I'm quite partial to extra sharp cheddar, especially if it's from Vermont, as well as white Wensleydale cheese with cranberry chunks in it.

I love brie, roulle and Stilton but the best cheese and most adaptable is a nice creamy Cheddar.

Just had an amazing Buffalo Milk Mozzarella Capresse. It is the best, very hard to find. I had it at 'Il Giardino' in Vancouver.
