This is such an easy recipe, that the hardest part is hiding the evidence.
Bachelor's Pasta.
Ok, first you need to learn to cook pasta. I recommend spagetti. This is because spagetti is easy to learn how to cook. Boil water and put the noodles in. (Get one of those measurers or figure a bundle about 1 inch thick for two people.)
Now, the secret to good noodles is to cook them long enough to get done, but not over done. The way to do this is to periodically pull one out and cut it in half (ok, you can bite it in half if you want.) Look at the bit ends. If you see a dot of white, thenoodle isn't done yet. Keep checking until you get NO white dot. Drain and add a bit of Extra virgin Olive Oil to keep the noodles from sticking.
Now, the sauce is so easy, that you won't beleive it.
1 can Hunt's Diced Tomatoes w/ Balsamic Vinegar, Basil, and Oil 14.5oz
1 can Hunt's Diced Tomatoes with Basil, Garlic and Oregano 14.5 oz.
1 can Hunts Diced Tomatoes (Plain)
1 can Hunts Tomato Paste 8 oz.
Now that's all you need. Mix the ingredients in a 4 quart pot, and heat over medium heat. (Medium heat keeps it frm burning)
Put the sauce over the pasta and a bit of Parmesean Cheese over the dish. Done!
Really that's it! I've had people who have never liked Spagetti love this recipe and there IS NO RECIPE to it! In addition, it's MEAT FREE, so even Vegan's love it.
Like I always say, the hardest part is hiding the cans so no one knows.

There's a book called "Phony Gourmet" and I got it for a friend of mine a few years ago because she's likewise challenged :)
There's a recipe in there for lasagna where all you do is get the Stouffer's lasagna, put it in your own baking dish, and then at the end of the cooking time (directions on the box) you top it with extra shredded mozzarella cheese for like the last 5 or 10 minutes.
Her husband still swears she makes the best lasagna in town - lol
Serve that with a salad (get the mixed green salad in a bag at the grocer's and add some grape tomatoes or make one from the salad bar with whatever looks good) Have a lowfat italian dressing or red wine vinaigrette for that... bottled stuff is fine...
Get a nice loaf of italian or french bread. The way bread is served in Italian restaurants is to pour out a light layer of extra virgin olive oil onto a serving plate and then grind fresh black pepper from a pepper grinder onto the surface of the oil until it's just speckled all over... then you break the bread up and dip it in the oil.
Get a bottle of Italian red wine to go with it... something like Santa Cristina Sangiovese or Straccali Chianti or even some Citra Montepulciano D'Abruzzo (in Virginia the first is about $9, second is about $8, last is about $5 and all are very good.)
Dessert? Try some fresh strawberries and Nonni's Biscotti from the grocery store... or pick up some cannoli at the local bakery. Have the strawberries no matter what :)
There. You have an authentic Italian meal made for romance... and you didn't have a panic attack or go broke making it :)

I think Kabobs can be impressive (and easy to make)... especially if you branch out and you don't make them the same as everyone elses (ex: beef/chicken with peppers and onions). Here are some ideas for some tasty, fancy kabobs:
1. Ham, sausage, smoked oysters, herring, shrimp, cheese
2. Cherry tomatoes, cocktail onions, pimiento olives, black olives, mushrooms, pickles, avocado
3. Pineapple, cantaloupe, and strawberries
If skewered kabobs aren't fancy enough, I always think (and I'm a girl) that Salmon is delicious, sounds fancy and expensive! Plus what a delicious taste and so easy to make.
I really suggest a "Smoked Salmon Pesto Pasta". Sounds nice and expensive huh? It would impress ME. Here's the link for the recipe... and the best part is it only takes half an hour to make:

I learned this recipe from my ex...
Italian Crusted Salmon~
ingredients: skinned salmon 3/4 lb per person, italian bread crumbs, dijon mustard, S&P, EVO, baking sheet, non-stick foil
~ Clean the salmon and rub with S&P.
~ Non-stick tin foil on the baking sheet(easy cleanup)
~ Put a little Extra Virgin Oil on foil under Salmon
~ Coat a thick layer of mustard on the top side of the salmon
~ Cover salmon with a thick layer of italian bread crumbs
** Bake at 475 for about 15 minutes.
Thats it! it is great with steamed asparagus (you can purchase it in a steam bag that you just microwave) and a nice tossed salad. Good luck.

I love pasta. Make her angel hair pasta with that yummy sauce. She'd probably also like a salad (I suggest spinach leaves) with balsamic vinegar and olive oil as a dressing. Then sprinkle some pepper on it and throw in some dried cherries, chopped walnuts, tomatoes, and shredded mozarella cheese. I don't know what she'd like for dessert, but I personally like sweet potato souffle... Darn, I'm hungry now...
