I need a good marinade or sauce to serve over pieces of chicken breast. Thanks.

Our crowd favorite (you're never going to believe it) is Catalina salad dressing!

You just marinate your chicken in it overnight, the longer the better, and then bake it in the oven or cook it on the grill. The kids all beg for it for their birthday dinners too - lol

Basil-Stuffed Chicken Breasts:

6 slices bacon
2 cups coarsely chopped basil
1 small garlic clove
1/4 cup extra-virgin olive oil
1/2 teaspoon fresh lemon juice
Salt
4 skinless, boneless chicken breast halves, halved diagonally
Freshly ground pepper
1 cup all-purpose flour
2 large eggs, lightly beaten
1 cup fine fresh bread crumbs
2 tablespoons unsalted butter
2 tablespoons pure olive oil

1. In a large skillet, cook the bacon over moderate heat until crisp, about 5 minutes. Drain, then coarsely chop the bacon. In a food processor, puree the bacon, basil and garlic to a paste. With the machine on, add the olive oil in a thin stream. Transfer the stuffing to a bowl. Stir in the lemon juice and season with salt.

2. Make a 1-inch horizontal incision in each piece of chicken to form a pocket. Spoon 1 tablespoon of the basil stuffing into each pocket and press gently to close. Season the chicken breasts on both sides with salt and pepper.

3. Put the flour, eggs and bread crumbs in separate shallow bowls. Lightly flour the chicken breasts, shaking off any excess, then dip them in the eggs and coat with the bread crumbs.

4. In a large skillet, melt 1 tablespoon of the butter in 1 tablespoon of the oil. Add half of the chicken and cook over moderately high heat until browned and just cooked through, about 3 minutes per side; lower the heat if the chicken browns too quickly. Repeat with the remaining butter, oil and chicken. Thickly slice the chicken and serve.

GOLDEN CORRAL BOURBON CHICKEN

1 lb. chicken meat, cut into bite-size chunks
4-oz. soy sauce
1/2 c. brown sugar
1/2 tsp. garlic powder
1 tsp. powdered ginger
2 T. dried minced onion
1/2 c. Jim Beam Bourbon Whiskey
2 T. white wine

Mix all the marinade ingredients & pour over chicken pieces in a bowl. Cover & refrigerate (stirring often) for several hours (best overnight). Bake chicken at 350 degrees F. for 1 hour in a single layer, basting every 10 minutes. Remove chicken. Scrape pan juices with all the brown bits into a frying pan. Heat, & add white wine. Stir & add chicken. Cook for 5 minutes & serve.

“OUTBACK STEAKHOUSE” RUB & MARINADE

1 pkg. taco seasoning
1 pkg. Italian dressing dry mix
1 can Coca-Cola

Mix the dry ingredients & rub on the meat on both sides. Place in a plastic bag & pour Coca-Cola over the meat. Marinate overnight. Remove meat & grill to desired doneness.

Barbecued Chicken Pizza
2 boneless, skinless chicken breast halves, trimmed and cut into 1/4-inch slices
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
3 tablespoons Crisco® Oil *
1 medium red onion, peeled and thinly sliced
1 cup thinly sliced mushrooms
1/2 cup hickory-flavored barbecue sauce
2 12-inch pre-baked pizza crust
2 cups grated smoked Gouda or shredded mozzarella cheese

*Use your favorite CRISCO Oil.

Heat oven to 450ºF.
Cover baking sheet with heavy duty aluminum foil. Heat Crisco Oil in large skillet on medium-high heat. Add chicken. Sauté 2 minutes, or until exterior is no longer pink. Remove chicken from pan with slotted spoon.
Add onion and mushrooms to pan. Sprinkle with remaining 1/4 teaspoon salt. Sauté 3 minutes, or until onion is translucent. Remove pan from heat. Return chicken to pan.
Stir barbecue sauce into chicken and vegetables. Place pizza crusts on baking sheets. Arrange half of cheese on the pizza crusts. Top both with chicken mixture. Top chicken with remaining cheese.

CHICKEN MARSALA - In a frying pan, butter (melted) sliced mushrooms (Lots). cook until mushrooms start to soften. In a second frying pan cook Chicken (boneless, cut into pieces or strips and coated with flour) in butter, until edges on all sides start to brown. In first frying pan, add finely diced garlic and a generous amount of Marsala wine to mushrooms and heat vigorously for about two minutes, add chicken from second frying pan and cook until sauce thickens (flour from chicken will thicken sauce). To finish, add a spritz more Marsala wine (important, to sharpen Marsala flavor) and serve. - ENJOY

u can bake it with a mix of basil pesto,ranch(both of them generously), a lit.bit of white vinegar and brown sugar, garlic,salt,pepper.mix well, cover with aluminum foil. turn chick breasts every couple minutes so they absorbe the sause well.it's badass...
oh, anda little bit of olive oil in the mixture.enjoy!

1cup white wine, add sliced mushrooms and red onion, simmer until veg cooked.
1 tub cream cheese add into pan
1/2 package Swiss cheese shredded add into pan.
keep on low heat stir until things melt. Add garlic and tarragon.

Go to AllRecipes.com and do a search for "Jay's Jerk Chicken" (Jamaican barbecue). It works well either on the barbecue or simmering on the stove. Saffron rice and maybe some fried plantains go well with them, without being too heavy.
