We barbecued way too many chicken breasts last night (or our company didn't eat enough :) I really like sliced chicken sandwiches with fresh tomatoes from our garden, but not *that* much. I'm desperately seeking ideas.

Chicken Enchiladas (Americanized of course)
shred your chicken fry it with onions and packet taco seasoning..(can add corn too) wrap in soft taco shells roll them up and place them side by side in a casserole dish. Pour canned enchilada sauce over them and sprinkle shredded white cheese over the top. (I use Munster) bake on 350 until cheese is melted and serve. You won't taste the BBQ at all I do it all the time!

Slice up the chicken (warm or cold) and put over this salad....its delicious!

Napa Slaw

Combine:
1bag cole slaw mix (just the cabbage, no mayo)
1bag shredded carrot
1bag purple cabbage
1bag brocoli slaw (optional)

toss all together

Dressing
(amounts are up to you for taste)

Honey Mustard Salad Dressing (or honey and mustard mixed together
crushed red pepper flakes
Juice of at least two lemons

Pour into slaw mix and toss generously

You can top with crunchy lo-mein noodles for added texture

I have used this many times, cant go wrong!

My favorite is Chicken enchiladas. Shred your chicken and add some sour cream, cream of chicken and celery with some green chiles and cheese roll them up in a tortilla then spread some more sauce with echiladas green or red sause (depending on how hot you like it) then some cheese on top of that. it is really good you can add other things too like olives and tomatos but I don't like that taste. So i leave them out. you can also make chicken noodle soup.

You can make chicken soup, or a chicken salad from the leftovers. Failing that, it can be used as a topping for pizza or nachos.

shred some meat for chicken tacos. also enchiladas. you can use red chili sauce or make one with green chilies & cream of mushroom soup.
green chili enchiladas:
fresh green chilis diced or canned green chilies
corn tortillas
8 oz. plain yogurt or sour cream
oil to fry chicken rolled in the tortillas
shreded cheese
1 can sliced black olives
1 can cream of mushroom soup
about 12 ozs. of either milk chicken broth or water

cut, dice or shread meat; roll in the corn tortillas & fry. put on paper towel to drain. after that aranange in a baking dish. in a bowl, stir in cream of mushroom soup, 12 oz of milk, chicken broth or water , diced green chilis &either yogurt or sour cream. pour over fried chicken tacos bake @350 degrees for about 30 min. take out & add shreded longhorn or colby cheese & top with black olives & bake for about 20 min more or less. serve with lettuce & diced tomatoes & diced green onions.

BBQ Chicken Pizza is a wonderful idea!! Also, you can make BBQ chicken salad my mother use to make that all the time quite tasty.

Well you could always shred it and portion it and then put it up in the freezer and eat sandwitches for a month and then it should be gone or you could always give some away.
