I'd start with a sweet mild Italian sausage. Brown sausage with yellow, red and green peppers. (Onion Optional) Basil, garlic, and 1 tsp of sugar. Add 1 can stewed tomatoes and simmer 20 min to 1/2 hr. add some water if it gets too thick.
Boil angel hair pasta and drain.
Serve sausage over pasta.

I start by browning the sausage in a little olive oil. Then in a big stewing pot I layer the sausage and cut up in big rings some red onion. Then I add my green or red or yellow peppers that I cut in thick long strips, I add some Italian tomato's and some diced tomato's as well as some tomato paste. Don't forget to add some garlic, oregano, and a little more olive oil. Cover with some water and let cook on a very low flame for about 3 to 4 hours. Too long and it comes out like mush, not long enough and the sausage isn't tender enough so check every now and then, and you have it.

NOT EXACTLY ITALIAN SAUSAGES WITH PEPPERS
The way most people make Italian sausage and peppers is to smother the sausage in lots of sautéed peppers. It's good, but I expand on the theme with plump, juicy tomatoes and a big handful of basil. And turkey sausage adds a healthy twist to this traditional dish. Try it spooned over pasta for a truly Italian experience.
2 tablespoons olive oil
1 1/2 pounds Italian-style turkey sausages, cut on an angle into 2- to 3-inch lengths
2 medium red onions, cut into 3/4-inch dice
2 large red bell peppers, cored, seeded, and cut into 3/4-inch dice
6 garlic cloves, thinly sliced
7 ripe plum tomatoes, cut into 3/4-inch dice
1/4 cup coarsely chopped fresh basil
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper to taste
1. Heat the oil in a large skillet over medium-high heat. Add the sausages and cook, stirring occasionally, until they are lightly browned, about 3 minutes.
2. Add the onions, bell peppers, and garlic. Cook, stirring often, until the vegetables soften, about 6 minutes. Add the tomatoes, basil, and oregano. Cook, stirring often, until the tomatoes and sausage are heated through, about 5 minutes more. Season with salt and pepper. Serve hot.
Makes 4 servings.

I like to boil my Italian sausages until they are no longer pink in the middle. I then slice them lenghtwise, but not all the way through. Pour a few cans of tomato sauce in a sauce pan, add slices of green pepper and onion and place the sausages in there. Simmer on low heat for about an hour so the flavors mis through. Serve on a fresh brat bun.
These can be made into small appetizers too. After cooking the sausages, slice them into bite sized pieces, and after soaking them, stab each one with a fancy tooth pick, place on a serving tray, and drizzle a little sauce over them. Serve immediately if you want them to be hot. Other wise they can sit in the sauce and people can get their own out with the picks.

Italian Sausage, Peppers, and Onions
INGREDIENTS:
6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
1/2 red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup white wine

DIRECTIONS:
Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.
Note:
Add a little more white wine while simmering if needed.

Italian Sausage, Peppers & Onions
(serves 4 to 6)
Ingredients
8 Italian sausages (hot or mild)
4 or 5 green peppers, seeded and cut into strips
2 sweet onions, cut into strips
2 tablespoons olive oil
salt and pepper to taste
Directions
Preheat oven to 350 degrees.
In a Dutch oven or cast iron fry pan add olive oil to coat bottom of the pan. Add green peppers, onions, and season with salt and pepper. Place Italian sausage on top of peppers and onions. Cover lightly with foil and bake for 45 minutes. Remove foil and bake another 7 to 8 minutes. Turn the sausages and bake another 7 to 8 minutes.
Remove from oven and serve on soft roll

Start with sweet Italian sausages. I prefer sausages with no fennel. Put a little bit of oil in bottom of pan add sausages. Cook on medium heat. When oil is cooked away add 1 can of stock or broth. I use Country Inn chicken broth. Cook until sausages are completely cooked through. Add veggies and cook until caramelized. This is really good if you chop up the sausages and put them over white rice.
