NO, sorry, lots of nutrients, particually vitamins are destroyed by cooking. Using the water in gravy get you some back, but you are far better off cooking the vegetables less and throwing away the water.
Try steaming, you can use the water for your gravy just as well

Boiling the water will pull most of the nutrients out of most vegetables, but unfortunately then destroys them! Better to simmer veggies gently, & then use the water.
Ironically, (since you said 'say carrots') the carrot is an exception, in that it needs to be well-cooked to make the nutrients in it accesible to the human digestive system. It is rare among vegetables in that cooked carrots are more nutricious than raw carrots!

You manage to get more of the nutrients than if you just threw the water out, but unfortunately it is the fact that the water has been at boiling point that has actually killed off a lot of the goodness found in veggies.

Some of the nutrients are destroyed by the heat alone, but you can save some of the vitamins and nutritional benefits from the water to make a great gravy.

The liquid in which you boil your greens is simply veggie goo! Yes, there may be "some" nutrients left in it, but it's so little it's practically insignificant! Your precious nutrients escape with the steam. What you SHOULD do is stop boiling your veggies and start steming them. There's a wide range of steamers you can buy...just check ebay. Steaming your veggies is the healthiest way to cook them cuz ALL the nutrients are preserved!
Forget that veggie goo please. It's making my tummy toss! Ugh!

Would say you will still lose some goodness why not use a pressure cooker the veg is not in the water so you will lose nothing .Brussels sprouts done in this way are brilliant..

Some nutrients are lost through boiling...best to steam veg..also you will find frozen veg holds alot of its nutrients too, i believe!

not as many as you would have if the veg was raw because cooking veg tends to destroy most nutrients they maybe some left in the water but not much.
