Ask a college advisor (from an environmental studies dept). Personally, i get emails all the time from the enviro job list serve from my university. There's opportunities in consulting, gov, education, and mostly non-profit

This question really depends on what your specialty is. There are various jobs working for the government state and national. Private corporations are always looking for environmental consultants. You could also teach and do research.
