I wouldn't say that Humpty Dumpty was a potato, but no where is the rhyme does it say he is an egg either. But the egg is the most common image we see of Humpty Dumpty, because it is 'impossible' to put back together again.

Try an experiment with an egg and a potato. Drop both of them from the top of a fence and you'll see that the egg breaks real easy after a fall.
