Absolutely adore the stuff...but have no way of getting it here in Aus.

Dulce de Leche Recipe
4 cups milk
2 cups sugar
1 teaspoon baking soda
Vanilla extract

Scald milk in heavy bottom sauce pan. Add all other ingredients, cook on medium low until it turns into caramel, about 1 hour.


ALSO - Try this I got from an Aussie pal of mine!

Dulce De Leche Cheesecake!
1 quart whole milk
2 cups sugar
1/4 teaspoon baking soda
1 pinch cinnamon
Cheesecake
8 ounces cream cheese, at room temperature
3 large eggs
1 teaspoon vanilla
1/2 cup heavy cream
1 cup dulce de leche

SAUCE Combine ingredients in a large heavy saucepan.
Place over medium heat and cook without stirring until mixture boils, 15 to 20 minutes.

Briefly remove from heat.
Reduce heat to low and cook, stirring frequently with a wooden spoon, 45 minutes to 1 hour.

When mixture becomes a caramel color and is think enough that you can see the bottom of the pan as you stir, remove it from heat.

Use at room temperature or cover and refrigerate.
Yield: 2 cups CHEESECAKE Preheat oven to 325 degrees.

Place cream cheese in food processor and process until soft.
With Machine running, drop in eggs, followed by heavy cream, vanilla then dulce de leche.

Place mixture in 9 inch pie dish.

Put dish in a large pan and add hot water until it comes halfway up the side of pie dish.

Place in oven and bake about an hour or until cake tester comes out clean and top is fairly firm.

Let rest one hour, then serve at once, or refrigerate, but remove from refrigerator one half- hour before serving.

Ingredients:

2 layer size white cake mix 1 packet
¾ cup of soften butter
5 egg whites
½ cup of water
2 tablespoons of finely shredded orange peel
1 recipe Dulce de leche Cream
1 recipe of whipped cream frosting
1 Recipe of Caramelized Sugar drizzle (optional)

Procedure:

Preheat the oven to 350 degree F and grease the baking tin.

Take large bowl, add in the cake mix, butter, eggs and water. Beat them well with the electric mixer on a low speed until it combines well.

Add in orange peel. Stir it well.

Spread the batter in a baking pan. Bake this For 40 minutes. To check if its baked well insert a tooth-peak.

After the cake is baked, let it cool for 10 minutes. Unmould the cake from the pan and remove the sides if the cake with the help of knife.

With the help of large knife cut the cake horizontally to make two layers.

Slide the wax paper underneath the cake layer and spread ¾ cup of Dulce de leche cream over the layer.

Top the another layer of cake. Cover the cake with cream and keep it to chill overnight.

Spread the whipped cream frosting over the top of the cake and sides as well.

Remove the wax paper from the under of the cake.

Before serving drizzle the Caramelized sugar Drizzle. Serve with any remaining Dulce de Leche Cream.

The easiest is this one:
1 tin of sweetened. condensed milk
Place in a pan of water, or a double boiler
allow to cook for 45 to 50 min.
Let it cool off before opening the tin.
(if it is too thick, do the next one a few minutes less)

If it has turned out too solid, open both ends of the tin, push the dulce de leche out, cut into thin slices...put on dessert plates place a slice of pineapple on top of each slice cover with a dollop of whipped cream (don't add too much sugar to your whipped cream, you have the sweetness of the dulce de leche) and add a few maraschino cherries for colour. Instead of pineapple use mango slices...also delicious
This is the first ever dessert I learned how to make, in my home economics class in school in Mexico! (About 46 years ago!!)

I did make a dulce de leche once in the strangest way...Left the tin of condensed milk out in the summer heat, (unintentionally) for the whole summer, when I found it, I opened it just out of curiosity...and it had turned into dulce de leche (as long as the tin hasn't rusted, it is perfectly ok!).

But I recommend you try the top recipe instead...it's faster and probably safer to eat!!!...

Dulce de Leche

1 gallon milk
3 cups sugar
3 tablespoons vinegar

In a large stockpot, add the sugar to the milk.
Bring to a boil.
Separate with the vinegar.
Cook until water disappears and only the solids are left and caramelized (about 40 minutes).
Serve with queso blanco and/or candied fruits.

Can you get sweetened condensed milk? If so you just heat it until it starts to caramelize. You can even cook it in the can. That's all dulce de leche is.
