Good Housekeeping's Cookbook. Preferably the ring bound version (easier to sit upright to cook with). The recipes are easy to follow, the book is nicely illustrated, and it has tons of great general knowledge teaching (how to choose a great steak, shows the difference between blade vs porterhouse etc., even how to set the table. I have several cook books and this is the one I always come back to.

The Brand Name Book of Baking available at walden's bookstores nationwide. It is simple to read and has hundreds of recipes using brand name foods that can be substituted for cheaper ones. They have a lot of baking hints too. Just follow the recipes and you will be all right.
They also have picture baking books for those people who just can't follow the recipe.
