I was planning on turning it into cheese. I was wondering if this was safe. The milk was pastuerized, but it has been in our fridge for 4 or 5 months. Now, it has been sitting out for a couple of days. It was sealed until a few minutes ago, when I popped the lid. It smelled rather sweet.

No. What you have there is rotten milk. Throw it away and save your intestines a week of hell.

There is no 5 month rule, only a 5 second rule. sorry!
But to give you a bit more information (and to cite the ever so frowned upon wikipedia):

It looks like you could do it, but you would need to get a hold of the enzyme rennet, which is found it the stomachs of young calves. Also you might need to add some bacteria (commonly from the streptococci family) to break the sugars down; you don't just need acid. Then you would need to curd the cheese, which sounds like the stage you are currently in.
You might want to throw out the milk, go buy a wedge of Bree (and a new carton of milk), and save yourself the trouble.

Pastuerization kills bacteria doesn't it? Wouldn't you need that bacteria to make cheese? Anyway i say leave for a few years maybe it will ferment and you will get milk wine.

Unless you want to end up with food poisoning i would advise you not to try it no matter how sweet it smell you are dealing with a dangerous food with the name of milk.

You can maker yer self some of that special cheese like velveeta. Real cheese uses unfermented milk.

Uhhh, eeewwww! No, I would suggest throwing it out!! Unless you live on a dairy and know what you are doing.

Go ahead! put it in a cheese cloth & make cottage cheese!Make sure you wash it good & ad enough cream after it drains!Don't forget the salt!& make sure it's dead too!
