I have had thin ripple, thick ripple and flat. I don't really care for the thin ripple but the thick one is great for dipping, it is less likely to break and hold the dip better. I also find they have a stronger flavour than the other two. Sometimes I like to eat just the flat too, but then I would most likely have a flavour like salt n vinegar.

i am gonna believe that your question is not referring to the obvious. but instead, the taste.
it depends who the manufacturer is. i.e. Wise has one of the greatest "flat" chips available. Ruffles makes the only (in my opinion) worth buying ripple chip. But all Kettlefried chips exceed the taste of both to me, no matter who made them. Of course personal taste is the key factor. If one does not like ripple chips, then it is possible for semi-stale flat chip to taste like steak over the freshest Ruffle in the world.

Rippled are thicker and better for dipping beause the ridges hold onto the dip and they are less likely to snap when dipped.
I make chocolate-dipped potato chips with the rippled ones--deliciously salty and sweet!

Well the rippled ones are thicker, crispier are stronger for holding chip dip, and are tastier.

Well they are cut differently, and that is about it. I like rippled chips because they hold the Tabasco sauce on them better. And it has to be real Tabasco or I won't eat it!

Flat chips are thinner,so they absorb a different amount of oil, and cook differently. but to start out with, they were both the same type of potato, just cut differently, its the cooking process that changes them.
