It's never a good idea to cut out entire food groups. You need that nutrition, and once you go back to your old eating habits, you gain the weight back anyway. Instead, try increasing the amount of fruits, vegetables, and whole grains, and decreasing the amount of meats and fats (without eliminating them - you need the protein). Drink more water, and less soda. Be aware of what you are putting in your mouth. Eat healthy food that tastes good - if it tastes bad, you won't want to continue eating it. The exercise is good - keep it up. Be sure to eat breakfast, and consider eating several smaller meals throughout the day, instead of two or three big ones. Make your body work to process it all day long, instead of just a couple of times. Here's the trick, though - you have to keep eating this way as long as you want to keep from putting the spare back on.
As far as changes to your metabolism, if there is any measurable change because of dieting, it would be to SLOW your metabolism, not speed it up. Exercise speeds it up. And there's little proof that we can change our metabolism in the long term.

Cutting out meat and grains will leave you miserable. You won't lose your spare tire that way. Plus, when you go back to your normal eating habits, you will gain more weight than you lost.
What kind of cardio do you do? Depending on what it is, step up the intensity. Also, supplement the cardio with weights. Not a lot, two 3-pound dumbells will work.

i spent 5 days just having fruit, veg water and green tea and went to the gym for 1 hour 3 times a week. but i am a veggie anyway so i only really cut out carbs. i lost about 5lb and felt like a total space cadet for the last 2 days.

Try to keep a a protein, such as legumes (chick peas, lentils etc.) or lean meat in your diet (grilled fish is a great choice) as well as low fat dairy products.
Studies show that people who consume low fat dairy can have a boost in their metabolism.
Don't cut out entire food groups from your diet-- there are plenty of alternatives for proteins and nutrients that you can get from a lot of low fat foods as opposed to their high-fat equivalents.
You need to keep protein and calcium in your diet, whether it be through protein shakes and calcium tablets or other means- it's very important for your health, energy levels and wellbeing.
You can lose just as much weight eating a balanced diet as you can only eating fruit and vegetables- and you will feel better for it physically.

if you just ate fruit and veggies you would probably feel unsatisfied even if you weren't hungry and would more than likely spend alot of time in the bathroom w/ raging diarrhea. go for something sensible like south beach diet.....you get to eat alot and don't feel hungry and lose weight fast the first 2 weeks.
