You need proper hair care for that

My daughter and I hair like yours. She is 30 and I am 55. I've been cutting it for her for many years. When she went to the hair dresser's they cut bangs which basically don't work for really thick curly hair. Insist that only hair dressers who are experienced with your type of hair cut it.
Let the bangs grow out. Use thining scissors which take out some of the thickness but blend properly-around the edges.
Never brush or comb your hair, only use your fingers and don't blow dry. Use a leave-in conditioner, there are some great glosses or "varnishes" on the market for your hair too. Olive oil works fine, so does Emu oil or creams. Some people like vo5 hot oil treatment... I also have curly hair.....it must be layered properly.

Why can't you leave it down? I'm curious to know. Is it a job thing or do you just not like it? If you just don't like it, get a new haircut first and foremost. Don't get it thinned like some people do, just go to a hairstylist who specializes in curly hair (or anyone whose first suggestion to you isn't "let's blowdry it straight!" when they see you, if an expert is not available where you live) and ask for a haircut that will be easy to care for and cute. Letting curly hair down is the best way to wear it, it's what the curls want anyway, and they have ways to get what they want whether you like it or not.

The trick to curls is not to touch them too much. If you brush them when they are dry, or when they are drying, you will only separate the curls, and that will make them angry. When they are angry, they frizz, out of spite, just to make you look bad. Comb them lightly with your fingers when they are wet. If you are using a conditioner that leaves your hair knotty, you are using the wrong conditioner. I like Finesse for curly hair, I think it's the best stuff under $15. (It's about $4) It leaves hair smooth and easy to deal with. Use an anti-frizz product specifically made for curly hair. Things like "Frizz-ease" are made for straight hair, and just make curls sticky and kind of mashed down. I like L'Oreal pumping curls spray. It really helps with my frizz. Anything that says "for curly hair" is usually helpful, though.

If you really must put your hair up, my suggestion is to grab a bunch and twist tightly, so that the hair twists back down to your head. Then pin the coil to your scalp. If you do a lot of these all over your head, they look cute and they won't fall out if your hair is too short for a ponytail.
