If it's a heavy, fatty dinner- a light fruit based dessert. If it's a light veggie filled dinner, go for something rich. Other than that, you can't go wrong with a couple of cookies and a cup of minty tea.

BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and one banana sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

Depends on your dinner - if it's something heavy, like spaghetti, then you'd want something light, like ice cream or Jell-O or even a cream pie, like coconut cream. If you've had something lighter, like fish, go for cheesecake or another type cake (I'd vote for carrot or chocolate) or pie ala-mode.
Anything sweet helps give closure to the meal.
