This is tried and true and you will love me after trying it. I know you just wanted sauce, but trust me on this one:
Baked Spaghetti by Paula Deen
8 servings
2 cups canned diced tomatoes
2 cups tomato sauce
1 cup water
1/2 cup diced onions
1/2 cup diced green bell peppers
2 cloves garlic, chopped
1/4 cup chopped fresh parsley leaves
1 1/2 teaspoons italian seasoning
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons sugar
2 small bay leaves
1 1/2 lbs ground beef
8 ounces uncooked angel hair pasta
1 cup grated cheddar cheese
1 cup grated monterey jack cheese
House Seasoning (use 1 1/2 tsp)
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Preheat the oven to 350 degrees F.
In a stockpot, combine the tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasoning mixtures, sugar, and bay leaves.
Bring to a boil over high heat, and then reduce the heat and let simmer, covered, for 1 hour.
Crumble the ground beef in a large skillet.
Cook over medium-high heat until fully cooked, with no pink color remaining.
Drain the fat from the meat, and then add the ground beef to the stockpot.
Simmer for 20 more minutes.
Cook the pasta according to the package directions.
Cover the bottom of a 13 by 9 by 2-inch pan with sauce.
Add a layer of pasta and then a little less than 1/2 of each cheese; repeat the layers, ending with the sauce.
Bake in the oven for 30 minutes.
Top the casserole with the remaining cheese, return it to the oven, and continue to cook until the cheese is melted and bubbly, about 5 more minutes.
Cut into squares before serving.
House Seasoning: Mix ingredients together and store in an airtight container for up to 6 months.

2 tablespoons olive oil
1 Onion (chopped)
1 Red Bell Pepper (chopped)
1 Green Bell Pepper (chopped)
3 Cloves Garlic (minced)
12 Roma tomatoes (chopped)
2 small cans Tomato Paste
3 small cans Tomato Sauce
1 bay leaf
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
1/4 teaspoon dried thyme
1/2 teaspoon dried parsley
1 teaspoon salt
1/4 teaspoon black pepper
Spaghetti Noodles
Parmesan cheese
1. In a large soup pot - brown Italian Sausage and crumble the meat into chunks. Drain grease.
2. Add olive oil, bell peppers, onion and minced garlic. Cook for 5 minutes, stirring frequently. Add chopped tomato and cook 5 more minutes, still stirring.
3. Add tomato paste and tomato sauce. Fill empty cans with water and add to pot.
4. Add spices to the spaghetti sauce. Add salt and pepper. Stir well.
5. Cook on low heat for 1 1/2 hours. Stir often to keep spaghetti sauce from sticking to bottom of pan. (add more water if sauce becomes too thick)
6. Remove bay leaf and ladle sauce over spaghetti noodles.
Top with Parmesan cheese.
Serves approx 6 people.

Madison County Spaghetti Sauce
Yield: 8 Servings
Ingredients
1/4 c vegetable oil
1 md onion; chopped
1/4 c green bell pepper; chopped
2 cloves garlic; minced
3 cn (12-oz) tomato paste (up to)
7 cn water
1/4 ts dried oregano
1 ts dried basil
1 sm bay leaf
1 tb sugar
1 1/2 ts salt
1/4 ts pepper
Instructions
Heat oil in a large pot over mediun heat. Saute the onion, green pepper,
and garlic until soft, about 5 minutes. Add the tomato paste and water, and
stir until smooth. Add oregano, basil, bay leaf, sugar, salt and pepper.
Simmer, uncovered for 1-2 hours. Serve over spaghetti.
Variation: For meat sauce, brown 1 pound Italian sausage and 1 pound ground
beef, and add with the spices.

This is an old family recipe. It is a true Italian sauce. It takes a while to make it, but trust me once you have made this, you will NEVER eat or want another!
I always make enough to freeze, because it takes so long to make. It freezes very well and will keep in the freezer up to 6 months.
What you will need:
2 1/2 pounds of hamburger
2 1/2 pounds of ground Italian sausage
4 pounds of roma tomatoes
2 small cans of tomato sauce
1 to 2 cups of beef broth
1/8 cup of fresh never dried oregano
1/8 cup of fresh Italian flat leaf parsley
1/8 cup of fresh basil never dried
2 packs of fresh mushrooms any kind you like is fine
1 whole red onion
1 whole yellow onion
3 red bell peppers broiled till black and then remove the skin.
2 stalks of celery
Elephant Garlic if you can not find it use the regular bulbs either way you will want to use at least 8 tablespoons, more if you like garlic like we do
Swish of Olive oil
salt and pepper to taste
What you will want to do:
Get the largest stew pot you have, I use a canning pot
Take the hamburger and ground Italian sausage cook together to the just about done point. Take off the stove and drain well in colander. Do not over cook it.
Chunk the roma tomatoes into bite size pieces, put into the pot start them in a bit of olive oil on low heat
Oregano, Italian flat leaf parsley, fresh Basil roll into log and chop as fine as you can get it, add it to the pot.
Mushrooms, red onion, yellow onion, celery, bell peppers, chopped into small pieces, add to pot
Add 1 cup of broth and 1 can of tomato sauce.
Salt and pepper to taste
Add the meat, bring to a boil. When it comes to a boil, turn down to lowest setting, cover and forget about it for 3 or 4 hours.
Go back and check the fluid level, if it is still good give it a stir and a taste (put spoonful on a bit of bread) recover and keep on cooking.
In 3 or 4 more hours recheck fluid level and taste it again If at anytime it needs more fluid rotate the rest of the stock and the sauce. Just use enough to keep it cooking and not sticking. Make sure your heat is always kept on the lowest setting.
You will cook this sauce for 24 hours a the very least. I usually cook it for 2 days. Sounds like a long time, but the end result will be one that you will never forget.
Use it on a good grade pasta, also makes a killer lasagna sauce. I have caught my husband eating it out of a bowl with no pasta.
This recipe came from my Grandmother Gambino. She always had a pot of this sauce going. Her house always smelled so good.

Go to www.cooks.com and check there. They have all sorts of recipes, and will have many varieties of spaghetti sauce. If there's a special ingredient or two that you like in your sauce (mushrooms, sausage, vegetarian sauce, etc) type that into their recipe search box with "spaghetti sauce," so you'll have fewer results to sort through. Homemade really is best -- forget the suggestions of jarred sauces.

Brown one pound ground beef, drain fat. Add two of the large (32 oz) cans of tomato sauce. Add one of the smallest cans of tomato paste. Add 2 tsp. of dried onions (I hate to cut them up), 1 tablespoon of basil, 1 teaspoon of oregano, 1 teaspoon of garlic powder and 1 tablespoon of sugar (carmelizes the sauce). Cook over low heat for 4 hours. Enjoy. Also, if you leave out the beef, it's a great sauce for bread sticks.

cook a large diced onion
and a diced bell pepper
and 2 cloved of garlic minced
in a small amount of extra virgin olive oil
when tender add 3 cans of diced tomatoes
and 1/2 cup of A1 sauce simmer for 20 min.
run through food proceser or blender so everything is the same size or smooth to your preferance.
YUMMY!!!!!

Have a look in your cupboard and throw everything in a pan. Cook for half an hour then eat! Everything goes with spaghetti!
