Most folks will make their grilled cheese with a good American blend, such as Kraft American, as it melts rather nice and has a smooth milk flavor. Personally, I enjoy my grilled cheese with a swiss cheese touch .. fortunately Kraft has a pasturized process cheese (easy melting) to satisfy that craving also. Unfortunately, Real Cheese does not melt well in the short time it takes to grill a sandwich.

My favorite grilled cheese combo is a mix of regular cream cheese and shredded fontina or smoked fontina cheese.
1. Just spread some softened cream cheese or some low fat spreadable cheese like laughing cow cheese on 2 slices of bread.
2. "Sandwich" a good amount of shredded fontina cheese and some fresh basil leaves between the 2 bread slices and grill on skillet, grill, in the oven...whichever way you prefer.
Sounds very simple...but a great gourmet twist on a classic.

There is a cheese made by the Portuguese Cheese Company called Corvo. I've never had a better tasting grilled cheese sandwich than when I made it with Corvo. Here's a link to their website:

Here's something you might not know. It's a fact that there are certain cheeses that don't melt as well as others, for example-processed cheeses. Try using GOUDA, as it is a soft real cheese that is very tasty. Let's be bold. Add bacon strips and a tomato slice. Go for it!!!

My husband loves Brie, but you must use a good french bread with it.
I think soft yummy goat cheeses on olive bread. (Not feta, something softer).

theres swiss and ham and then theres american and sliced onions cooked together.. put onions on the bread 1st. then add cheese.. simple and tasteful.. mmmm
