Parmesan Pork Cutlets:

1 pork tenderloin (about 1 pound)
1/2 cup all-purpose flour
2 large eggs
1 cup dry bread crumbs
1 teaspoon kosher salt
1/4 cup (1 ounce) grated Parmesan
4 tablespoons olive oil
6 cups arugula, rinsed and dried
2 tomatoes, sliced into wedges
1 tablespoon extra-virgin olive oil
1 lemon, quartered

Heat oven to 400° F.

Thinly slice the tenderloin on a diagonal into 8 pieces. Pound the slices to a 1/4-inch thickness.

Place the flour on a plate. Place the eggs in a shallow bowl and beat lightly. In a separate bowl, combine the bread crumbs, salt, and Parmesan. Working in batches, lightly coat the cutlets first in the flour, then in the egg mixture (allowing any excess to drip off), and finally in the bread crumb mixture.

Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add 4 of the cutlets. Cook until golden, 1 to 2 minutes per side. Place the cutlets on a baking sheet. Wipe out the skillet and repeat with the remaining olive oil and cutlets. Transfer to oven and heat until the pork is cooked through, 8 to 10 minutes. Divide the arugula and tomatoes among individual plates and drizzle with the extra-virgin olive oil. Serve with the cutlets and lemon wedges.

Tip: When it's not peak tomato season, try using intensely flavored Roma (plum) tomatoes instead of tomatoes on the vine. Use 2 Romas for each regular tomato.

SOUTHWESTERN PORK CUTLETS

3 tbsps. vegetable oil
2 tbsps. chili powder
1 & 1/2 tsp. cumin
1/2 tsp. salt
1 tsp. powdered red pepper (NOT red pepper flakes)
2 large cloves garlic, minced
4 to 6 pork cutlets

Mix first six ingredients. Place the cutlets in a baking pan that has a lid, or you can cover it with tin foil. Rub marinade into the cutlets and pour remaining over cutlets, then cover and let sit in fridge for at least 15 minutes. Broil your cutlets or cook them over the grill. Spicy, but different and really good!

pork cutlet parmisanna

2 lbs pork tenderloins, sliced into medallions
1 egg
1 cup breadcrumbs
1 tablespoon italian seasoning
4 cups spaghetti sauce
2 cups mozzarella cheese
1/2 cup parmesan cheese
oil, to fry


With a meat mallet, pound pork into thin patties.
In a shallow dish beat egg, in another shallow dish, combine breadcrumbs and seasoning.
Dip each pork medallion into beaten egg and then into bread crumbs.
Fry over med hi heat till browned- it does not need to be fully cooked.
In a 9 X 13 baking dish, put in 1 cup sauce and half the pork, top with half of the cheese. Top with half the remaining sauce. Repeat again for balance of ingredients.
Bake covered at 350 for 1/2 hour, remove top and bake 10 more minutes.
Serve over pasta.

BBQ Sauce:
1 cup apple cider vinegar
1 cup ketchup
3 tablespoons packed dark brown sugar
1 tablespoon yellow mustard
1 tablespoon cane syrup or molasses (recommended: Steen's)
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
Pork:
2 pork tenderloins
Salt and freshly ground pepper

Potato Salad:
1/2 cup mayonnaise
1 medium onion, chopped
1/2 lemon, juiced
1 tablespoon chopped garlic
2 tablespoons chopped cilantro leaves
1 pound red potatoes, boiled until tender
1/4 pound bacon, cooked until crispy and drained
Salt and pepper
Chopped chives or green onions, for garnish


Preheat a grill or grill pan. In a bowl, combine ingredients for BBQ sauce and whisk well, Set aside.
Slice the pork tenderloin into pieces and pound thinly between sheets of plastic wrap. Season with salt and pepper. Dip into the BBQ sauce and grill quickly on the grill or in a grill pan.

Potato Salad: In a large bowl, combine mayonnaise, onions, lemon juice, garlic, and cilantro. Quarter the cooked red potatoes and add to the bowl. Add the cooked bacon and season with salt and pepper. Stir well.

Mound the potato salad onto a large platter. Top with the BBQ pork cutlets and garnish with chives or green onions.

I marinate mine in V-8 juice and a minced clove of garlic overnight.

Then I coat in a mixture of 1/2 seasoned italian bread crumbs and 1/2 parmagan cheese.

You cook in a 350 oven for 20-40 minutes, depending on the thickness of the chop.

It's delicious and out of the ordinary.

I like these several ways, this time of year, BBQ with seasoned salt and either use BBQ sauce, or mix mustard, salt, pepper, and if you are wanting a little sweet to it add a bit of applesauce (can bake it too - but sear it first in the mustard rub in hot garlic oil)-

or I like to cover them in Italian Dressing and bake them for something different -

or fry them up like chicken with dressing, gravy and potatoes.
