Does your mom have any specific health issues and how old is she?

Here are some excellent sites that discuss in great detail nutrition for seniors, as well as meal planning. I think you will find them very informative and they should give you lots of ideas. I hope this helps.

For my son, who actually just hates spices in general, I make a Fettucine Alfredo with either the fettucine or egg noodles, a cup of 2% milk, and a half a bar (4 oz.) of cream cheese. I use about a tablespoon of parmesan to give it a touch of flavor without using salt, and some parsely flakes which add flavor but are so mild that they don't upset the stomach. (Add your milk a half cup at a time, to make sure it doesn't get too runny; depending on how much of the pack of noodles you plan to use.) Hope this helps!

i would sugget finding recipes that focus on other ingredients to make the food superb. like vegetables. "post roast with roasted carrots, potaotes, celery", baked chicken in creamy mushroom sauce and grean beans with bacon and onion., etc.
