BASIC PANCAKE RECIPE
Ingredients
For the pancake mixture:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
To serve:
caster sugar
lemon juice
lemon wedges
Method
Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets a airing. Now make a well in the centre of the flour and break the eggs into it. Then begin whisking the eggs - any sort of whisk or even a fork will do - incorporating any bits of flour from around the edge of the bowl as you do so.
Next gradually add small quantities of the milk and water mixture, still whisking (don't worry about any lumps as they will eventually disappear as you whisk). When all the liquid has been added, use a rubber spatula to scrape any elusive bits of flour from around the edge into the centre, then whisk once more until the batter is smooth, with the consistency of thin cream. Now melt the 50g/2oz of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then pour the rest into a bowl anduse it to lubricate the pan, using a wodge of kitchen paper to smear it round before you make each pancake.
Now get the pan really hot, then turn the heat down to medium and, to start with, do a test pancake to see if you're using the correct amount of batter. I find 2 tbsp is about right for an 18cm/7in pan. It's also helpful if you spoon the batter into a ladle so it can be poured into the hot pan in one go. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it's tinged gold as it should be. Flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.
Stack the pancakes as you make them between sheets of greaseproof paper on a plate fitted over simmering water, to keep them warm while you make the rest.
To serve, spinkle each pancake with freshly squeezed lemon juice and caster sugar, fold in half, then in half again to form triangles, or else simply roll them up. Serve sprinkled with a little more sugar and lemon juice and extra sections of lemon.

Easy Pancake Recipe
Ingredients
1/2 cup milk (or buttermilk)
2 tablespoons butter or margarine (melted)
1 egg
1 cup flour
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon salt
Mix the milk, butter and egg in a bowl. Combine the flour, baking soda, sugar and salt and add them all at once to the first mixture. Stir until just moistened. Lightly butter or grease a griddle or frying pan and set over moderate heat until a few drops of cold water sprinkled on the pan form skittering globules. Pour about 1/4 cup of the batter (per pancake) onto the griddle. Cook until bubbles form on top and the undersides are lightly browned. Turn with a spatula and brown the other side. remembrer, not to beat to much, only til it's incorporated and let it reast for a few minutes like 2-3 minutes before pouring into the pan :)
the coolest part is adding banans and other fruits to make faces, let them help you make it.

2 cups of bisquick,
1 cup of milk, 1 egg
mixed together so there aren't any lumps. Before you heat the pan, pour in 1 tablespoon of oil. Rub it around with a paper towel you've made into a ball. Heat your frying pan until a drop of water sizzles when you shake it into the pan. Make a test pancake to see if the pan's too hot. You will know it's time to turn them when bubbles form on the top while it's cooking. If your test pancake turns dark brown before the bubbles form, your pan is too hot. Adjust your heat if necessary. Between each batch of pancakes. run the samed oiled paper towel around the pan to reoil it. I learned this from my mom...it always works.
When you get confident with this, you can start adding blueberries, or small pieces of apple, or cinnamon etc.
When my kids were little I used to take a tablespoon and draw animal pancakes in the pan for them. Turtles and snakes are easy. Have fun!

Buy a complete mix, measure it into a bowl. Add however much water, and some oil. Then mix itinto a batter with a flat whisk. Then you can add to it, if you want to. You'd have to follow the directions on the box, of course. I'll see if I can find a good pancakes recipe in my collection, next week. Let me know, if you want it.

TO MAKE PANCAKES LIGHT AND FLUFFY
Add 2 tsp. of baking powder to purchased dry baking mix.
plus add 1 - 2 Tbs. lemon juice to the batter.
You will end up with a much denser pancake when making the mix without the baking powder and lemon juice.

I'll be making pancakes soon with flour, water and powdered egg due to a shortage of milk (I haven't got a cow!).
Just keep adding milk (or water) to the flour and powdered egg until the consistency begins to get runny. Then test it out on a non-stick frying pan.

Buy the premade pancake mix, all you add is milk and egg. They come out great. Just follow the directions.

3 eggs 4 heaps of self rasing flour salt peper and enough milk to make it runny. Make sure the pan is nice and hot before putting the mix in. Let me know how you get on.
