I'm assuming you are referring to the British chips, not the North American "chips" that Brits call crisps.
On very special occasions I like chips and gravy with melted cheese curds. It's called Poutine, but I call it "heart attack in a bowl". I have it once a year or so.

Some times ketchup some times gravy......melted cheese is good too.....but if getting chips from a chip shop they have to have lots of salt and vinegar
