I bake cookies, but when they're finished, the cookies are hard and crunchy.

Ah Ha... I am a cookie conisour. The key to making soft chewy cookies is to slightly under bake them. I don't mean to leave them raw, but take them out 2 or 3 minutes early. Yummy!!

Use butter, not margarine. Bake for a shorter time. If you put a slice of white bread, (the mushy kind with no nutrients) in with the cookies when storing them, it will help to keep them soft. I add a box of vanilla pudding with my choc. chip cookies and that makes them soft too.

I use slightly less margarine or butter than the receipe calls for and add some plain yogurt (less calories for one thing). I also use 1 % buttermilk, rather than milk which gives cookies a great texture. Also, don't overbake them and if you're dropping cookies with a teaspoon, don't flatten them too much.

Bake 'em a shorter length of time. A stiffer batter makes a softer cookie.

ITS THE AMOUNT OF LIQUID AND THE AMOUNT OF BUTTER OR OIL ADDED....DONT OVERBAKE IS THE KEY.
