Do you like them cooked with smoked Turkey, or pork products? I think they are best with smoked Turkey.

Kale is a very good source of iron, calcium, vitamin C, Folic Acid, vitamin K and Carotenoids (which provide vitamin A). Due to its high nutritional value it is often recommended as a way to consume many good nutrients. It also contains lutein and zeaxanthin which aids those suffering with age-related macular degeneration . This is a disease of the eyes which causes eventual blindness and for which there is no cure. Because kale contains more of these substances than any other vegetable it is particularly useful in slowing the condition down.

I grew up down south and we grew turnip greens, collard greens and mustard green every summer. We lived on them and I love them. Now that I'm trying to eat better I cook my greens with turkey bacon. Not as good as with the smoked pork ribs and stuff in them, but I want to live long and prosper. I've never tried smoked turkey. I'll do that next time. My daughter and my northern raised husband make lots of faces when I put greens on the table! Maybe smoked turkey will help. (-:

I only about 5-6 vegetables and I love collards and kale. I am African American and was raised on them. I use mostly smoke turkey as my father does not eat pork and it is probably healthier and just as delicious.

I prefer them cooked with ham hocks just because the fat and the gelatin in the bones seems to make the pot liquor much richer and more flavorful. The smoked turkey is a nice alternative if you either don't eat pork or are trying to be healthier. Another alternative - Knorr makes a ham flavored bouillon which I use when I don't want to take the time to cook either ham hock or smoked turkey and just want to get my greens on!

I love Kale, Collard & Mustard greens.

Kale w/ potatoes & turkey, Collards w/ pork, & Mustards w/ salad & "soul" food!

I love greens. And I vote for smoked turkey, too. When you give them a good steaming, they get real tender. And greens are amazingly good for you (lots of iron and calcium, plus vitamins C and K). And inexpensive...even the smoked turkey! Go to your local farmer's market and you see some cool greens that you can't find in the grocery store, such as Swiss chard. Hoo-ha!

Collards, mustard greens and turnip greens are all delicious. Have only had with pork, but will now try them with turkey. And cornbread.

I have never tried smoked turkey.
I will try it when I make collard greens again.
I usually use smoked ham hocks.
Thanks for the suggestion, it seems to be a much healthier choice!
Do you garnish your greens with sliced tomatoes lightly salted?

Yeah, collard greens is soul food. Whiteys don't eat much of it. But I like it, even though I've only had it from a can which is grose.

Smoked turkey is ok, but if you try them with bacon, sliced onions, and a little bit of garlic butter....yummy!!
