Yes, you keep the shell on the pumpkin seed when you eat it. Especially if you are toasting them. That way they are super easy to season.

You can (we do) they are wonderful roasted in butter and salt and warm from the oven. We make them every fall! My sister eats them like sunflower seeds, cracks them and eats the inside. Its up to you! Enjoy

Yeah, dude- you salt the seeds, put them on a cookie tray, roast 'em in the oven, and then let them cool and enjoy- shell intact!
